Sweet Potato Cheesecake

This recipe made a very delicious basic cheesecake that filled up the entire springform pan. Would definitely make again. Things I did differently: Baked sweet potatoes in microwave, scooped out flesh and whipped them with a hand mixer - came out nice and smooth. Added cinnamon, nutmeg, and a splash of molasses to the filling. I'd argue heavy cream doesn't do much for the texture, and it would be okay if you omitted it. I did not make the praline topping, as the cake is already super rich, but did serve it with a homemade eggnog flavored whipped cream. Nice, reliable recipe!

Best Big, Fat, Chewy Chocolate Chip Cookie

These really did make big, fat chewy cookies! I creamed the butter and sugar together, and added only 1 1/2c chocolate chunks. I made heaping 1/4c sized dough balls and flattened them out a little before baking for 15 mins. Made 15 fabulous cookies.

Carrot Pecan Crunch Pie

I followed this recipe as is, and think it has a lot of potential! The filling made was actually enough to fill 2 pre-made Pillsbury pie crusts. In the future I would definitely make my own crust, or maybe try it with graham cracker. For the filling itself, I would add a lot more spices (cinnamon, nutmeg, cloves, ground ginger). Overall a wonderful, unique recipe. Can't wait to try it again!

Chicken Souvlaki Gyro Style

I'm not really sure how chicken souvlaki should taste, but I do know that this recipe does make tasty chicken. I added some onion slices to the marinade. I was also in a hurry so ended up stir frying the chicken in a wok, and it still came out great. Served this with tzatziki sauce and pita bread. Will definitely make again!

Tzatziki Sauce

Not sure if this is very authentic, but it is a very fast and tasty recipe! I thought it might be a little watery since the yogurt wasn't getting drained. I peeled and sliced the cucumber, salted them, then squeezed out the excess water before finely dicing it and throwing it into the yogurt. I also used dry dill. The flavor and consistency came out great!

No Fail Pound Cake

Well received! Made 4 mini loaves with Betty Crocker butter cake mix, omitted the lemon extract. Served with a fresh strawberry topping. Great flavor, but would prefer my pound cake a little bit denser. Will Definitely make again. Thanks!

Carrot Oatmeal Muffins

These muffins were very moist and light! 4 stars because I felt that they were a little bland and needed more spice. Following other reviewers' advice, I used 3/4c unsweetened apple sauce and 1/4c vegetable oil, and reduced brown and white sugars to 1/2c. I also plumped the raisins (boil in water for a few minutes), used whole wheat flour, and added more cinnamon, nutmeg, ground ginger, and cloves to give it a spicier taste. I also used a combination of whipped and flavored cream cheese for a quick cream cheese filling. Tasty! Will make again!

Blueberry Lemon Bread

I used a brownie pan and wheat flour. They came out great like nice little blueberry bars. I used frozen berries didn't have any problems with them berries sinking.

Rich and Creamy Tomato Basil Soup

Easy and delicious! I added a little bit of minced garlic and onion. Otherwise I followed it exactly. It also makes a great base for a creamy tomato sauce. I took my leftover cream, butter, tomatoes, etc. and added bell peppers and mushrooms. It was great over penne!

Big Soft Ginger Cookies

Wow. These are incredible. Added nutmeg to the dough and iced them with the glaze from the Iced Pumpkin Cookie recipe by Gina. Dough was very sticky even after refrigerating, but totally worth it. I froze the dough of a 2nd batch and that worked much better.

Banana Bread

This bread was wonderfully easy and yummiful. I used half brown half white sugar and added 1/2tsp baking powder. I used a 9X3 bread pan and found that that middle top portion of the bread just wouldn't quite bake all the way, but the rest was great. Next time will try baking at a slightly lower temp.

Bob's Awesome Lasagna

Easy and delicious! Definitely need to use 2 jars (52oz) of spaghetti sauce. I omitted the salt and garlic salt because the cheese made it salty enough as is. I also sauteed 3 cloves of fresh minced garlic and used small curd 1% fat cottage cheese. This recipe is good for hiding random vegetables lying around. Add thinly sliced celery or some shredded carrots and the kids will never know.

Suki's Spinach and Feta Pasta

A light and easy dish. I only used 4oz of feta because my eaters aren't big on cheese, and it still imparted a nice flavor without making it overly cheesy. I also poured the sauce over chicken breasts and baked them @ 350 for 20 minutes then served it all up over pasta. Yummy!

Angel Chicken Pasta

Very easy and delicious! Mine came out a little salty, but that was probably due to the brand of dressing mix and white wine I used. I baked the chicken @ 350 for 20 minutes. Chicken comes out moist and tender while cutting down cook time.
