Clam Bake

Couldn't get any more delicious or easy! I took a large stockpot, put the red potatoes on bottom, a layer of clams, layer of mussels, and then snow crab legs instead of the shrimp. We also put a banana leaf on top for steaming (can also use seaweed). We added the entire 48 oz of chicken stock and a bottle of beer instead of vermouth. After sealing tightly, we followed the recipe's instructions for 45 minutes on Med-low (after bringing to a boil). We also included Old Bay Seasoning I was afraid the seafood would be overdone, but it wasn't. Excellent- especially the snow crab! A nice surprise was how delicious and soft the red potatoes came out. The skin had a lovely taste and the insides were creamy. We're already planning our next one, with a bigger pot and more seafood :).

Lemon Garlic Tilapia

Excellent with adjustments. I followed a lot of reviewers' advice: Preheat oven to 400. Mince up 2 cloves of garlic, squeeze 2-3 tbs of lemon juice, 3-4 tbs of butter melted, and some ritz crackers made into crumbs. A little salt and pepper on the tilapia. Sprinkle on the garlic, then lemon juice, then butter. Finish with the cracker crumbs. Put in oven for about 12 minutes and it's finished. Tastes great and even the kids like it!

Avocado, Tomato and Mango Salsa

Unbelievably good! This is the best salsa I've made yet and I've tried quite a few recipes here. It's a perfect blend of tropical flavors. We had it with chips, though I'm sure it'd be good on fish as well. Word to the wise- if you're sensitive to heat/spice, put less Jalapeno in. I just put in half a jalapeno and it was just enough heat. Also, I put in just one clove of garlic as opposed to 3. I love garlic, but not quite THAT much. Overall, a hit.

The Best Rolled Sugar Cookies

Delicious! I found this recipe very easy to work with. The dough is easily rolled with the help of some flour and wax paper on top of my surface. I used a simple glaze with this cookie- about 3/4 of a cup of powdered sugar and a couple teaspoons of milk make a nice, simple glaze. I made 3-4 of these bowls of glaze with different colors and set my kids to help me. Great for making a tradition and memories.

Holiday Peppermint Bark

This recipe is so easy and yet very delicious! Why pay for the expensive stuff when you can make it at home for about $3.50? I melted the white chocolate in a double broiler and it was very smooth that way. Crushing the candies proved to be rather difficult at first, but I finally got the hand of it.

Jam Filled Butter Cookies

Wow- these are easy to make and my husband and kids loved these! Minimal effort and mess, but great result! I followed the recipe exactly and it came out very tasty. I was only able to make 20 out of this batch, but my cookies were big.
