Grilled Asian Chicken

A great recipe because it was super easy AND super tasty. I only made some slight modifications: I used diced garlic and grated ginger and also forked the chicken several times to allow seepage of the tasty juices into the meat. I then baked the chicken (covered) for ~45 minutes at 350 degrees, then uncovered the chicken and baked it for 5 or 10 minutes more to let it brown up. Then, I diced it all up and used it in a bean thread-based chicken recipe. Super delish!

Pumpkin Chili

SOOOOO DELICIOUS! I'm SO glad that I made this. I followed the suggestions of others, and did the following: Added 2 cans of black beans instead of kidney beans. Added a little more pumpkin than what was called for -- maybe (1) 15oz can and a half? Added about 5 sliced carrots. Added more spices overall, to taste, including more pumpkin pie spice, some cumin, some cayenne pepper, some more cinnamon, more chili powder, more ginger... Even then, the chili wasn't horribly spicy. I also didn't add the whole can of tomato juice - maybe just 3/4 of it. I wanted a nice, thick chili. The pumpkin makes this chili rock out!! And it's nearly impossible to screw up the recipe. Just dump stuff in a pot and let it simmer. Duh.

Health Nut Blueberry Muffins

A very good muffin, made even better by the fact that it's also pretty darn healthy! Based on the earlier suggestions, I made my own modifications. I doubled the recipe and ended up making almost 30 muffins (they were a little on the small side). Since cranberries are currently in season, I substituted them for the blueberries. I omitted the oat bran and instead substituted approximately the same amount of all purpose flour. For the doubled recipe, I added 1/2 cup Splenda and 1 cup brown sugar. I also added 2 t cinnamon, 1 t nutmeg and 1 t allspice. They baked up moist, weren't too sweet, and were not as heavy as I expected, considering the amount of wheat flour. Truly a recipe that can be modified fairly extensively and STILL come out great! I'll definitely be making these again!
