Pesto Chicken Penne Casserole

Liked but needs more spice. Made half with only 4 oz pesto and used 9X9 pan. Used frozen chicken cubes thawed. Will make again.Next time will try more pesto and maybe garlic, pepper, oregano.

Fast and Easy Creamed Spinach

Loved it. Cut recipe in half, just right for 2 people. Chopped spinach before cooking and drained in colander by pressing with spoon instead of paper towel. Cooked onion in oil at first then added spinach. Used milk instead of cream and added shredded monterey jack cheese.

Broccoli Cheese Chicken and Stuffing

I used a 14 oz bag of Frozen Tuscan Seasoned Broccoli and 3 whole breast with Cream of Chicken Soup and it was delicious. I baked it 20 min covered and 20 min uncovered until the internal temperature of the chicken reached 165*F.

Authentic French Meringues

These are perfect. Better than the ones I had in Italy. Hint: never use a plastic bowl when whipping whites it can hold oils that interfere with the whipping. I tried the spoon idea and my oven shut off so had to bake at 185 and it worked fine.
