Mexican Rice III

The first time I made this, my family really liked it, but since then I have tried to make it again 3 or 4 times and it has been disappointing. Maybe too long cooking, or too high heat, or too little liquid, I don't know! Will look for another recipe :(

Fajita Marinade III

Simple and easy, I use this on both chicken and steak for fajitas and its become a weekly favorite. My 10 year old who previously refused eating mexican food now loves chicken quesadillas made with this marinade.

Italian Spaghetti Sauce with Meatballs

I'm not a big spaghetti fan, but I find myself craving it after having made this recipe a couple times now. The taste is fresh, the sauce is thick, and the meatballs are just perfect. My only change was to use two cans of crushed tomatos because my daughter doesn't like a chunkier sauce. With crushed tomatoes it comes out thick and hearty. Meatballs need no prior cooking or browning, just plunk them in the sauce and they cook to perfection. This is now a once a week family favorite!

Praline Sweet Potatoes

I have made these at the holidays for about 3 years in a row now and they are always asked for again. Make sure to choose a large dish for baking, as potato mixture will pouf a bit while cooking. I bake my sweat potatos the day before, mix and refridgerate until next day. Pop in the oven when the turkey comes out to rest and be carved, works for me!

Banana Banana Bread

I've made several banana bread recipes here and I always come back to this one, it is a wonderful standard recipe that you can build upon and customize to your liking. A few pointers... This is a DENSE bread, the last one I made I actually weighed on my kitchen scale and it came to just under 2 1/2 lbs! This probably due to the 2 1/3 cups mashed bananas; I generally use about 5 medium size bananas but have used a little as three and it still came out good. If you like a lighter cake or muffin type bread, look elsewhere. Mix the ingredients carefully; I use my mixer to cream the butter and sugar and incorporate the eggs, but for the bananas and flour mixture I use a wooden spoon and mix gently until everything has just come together. I also add about 3/4 to 1 cup of chopped walnuts. 350 degrees for 1 hour, 15 minutes works for me but it is extremely important that I watch where my oven racks are positioned, too high in the oven and the bottom will not bake correctly, too low and it burns before the middle it cooked through. I position my rack one notch lower than direct middle of my oven and it comes out perfectly. Test with a toothpick in several places for doneness so you don't mistakenly hit a banana piece and think it is underdone. I think that's it!

White Sauce

This is the recipe I am always calling my mother for, she adds nutmeg and pours it over blanched cauliflower. Getting it from her is always confusing, she doesn't measure and I never get it right. So glad to find it here!
