Shrimp Scampi III

This is a great recipe. Left the sliced garlic in the butter and made sure it didn't brown. Used linguine and squeezed a little lemon juice over top at the end. Used the fine Italian breadcrumbs and only about 1/4 cup, which was plenty and was a really neat way to thicken the butter sauce.

Creamy Rice Pudding

It's awesome. So creamy and rich. I used skim milk and omitted the butter, and it turned out fine. I also used dates instead of raisins, because that is what I had on hand. They were a little strong, but overall it was amazing.

Morning Glory Muffins II

I really liked these muffins... I made the recipe exactly and they turned out well, although I think my oven was a little hot and they were almost underdone with very dark tops. I froze them in little baggies and they seem to thaw out ok, not too mushy. Luckily I have a food processor to do all the shredding!

Pizza Dough II

I even messed this one up, by forgetting to add the sugar to the yeast and adding to the flour mixture. I realize that the yeast needs the sugar, I must have be missing my brain that day! However, besides having the dough taste a tiny bit sweet, it turned out really well, and it still doubled its volume. Great recipe! Easy!

Classic Tiramisu

WOW! I followed other reviewers' advice to let it sit overnight, which meant running to the grocery store at 11pm the previous night... I found the mascarpone in the deli section of my store, not with the regular dairy. I also made 1.5 times the recipe to make it really fill up a 9 x 13 glass dish (with enough to make a little single serving so I could try it out before my party!). I added some coffee to the Kahlua and quickly dipped the top and bottom of my "Vicenzovo" lady fingers (if I submerged them completely they got too mushy). It seemed too sweet in the morning but by the evening it had mellowed out. It was great!

Easy Garlic Ginger Chicken

I had high hopes... I used fresh ginger and what I thought was enough, but all I could taste was lime. I wanted something with more garlic and ginger. Edible though!
