I should've reviewed this when I discovered it. I was trying to find low-carb choices that would cover the veggies for my autistic son and still be satifying for my daughter. This is the ticket. Side Note: You can "food process" any veggies you want in the sauce and no one will know!

I've been using this recipe for at least a year, and forgot to give feedback. This is wonderfully easy and delicious. A perfect fit for my lifestyle and healthy eating. LOVE IT!!

Shrimp Scampi Bake

My daughter says, "Great! Great! Great!" She said it tastes just like Red Lobster or the Oliver Garden. I think it tastes better because it's fresh, the shrimp are bigger, and I made it myself! Bravo!

Fried Spinach

Cooking healthy and on a regular basis for my family is new for me. I have chosen to depend on allrecipes.com for the inspiration. This is the side dish from the first night. All I can say is, "WOW!!!" My husband informed me that he didn't like spinach and proceeded to eat it like it was cake. THANK YOU!
