Spinach Chickpea Curry

This was really good. I decided to fry my tofu before I put it in. I cooked the garbanzo beans longer than instructed, and they came out nice and soft. I'll make this again.

Curried Lentils

This was really easy to make. I added steamed broccoli and cauliflower to mine. I also added some garlic and garam masala for my personal taste. It was really good with some soy sauce stirred into it. I'll make it again due to how easy it was.

Barbie Doll Cake

If my photo is approved, mine is the Cinderella Barbie cake. I made this for my dd's 2nd birthday, she loves Cinderella. I thought of revising this recipe because I made alot of changes but decided it best if I shared them here: I used 2 boxes of french vanilla cake mix and used 1 can diet Sprite per cake mix in place of all additional ingredients. I have a set of 3 (small, medium, large) pyrex bowls so I baked part of the batter in each bowl and created a 3 layer cake. I frosted the cakes with 2 jars of butter cream frosting tinted blue *WARNING* butter cream frosting is slightly yellow, which caused my skirt to be a bit green! Then I added blue sugar crystal sprinkles for the sparkle of Cinderella's dress. After inserting the doll, her pelvis was still slightly exsposed (1/2 - 1 inch) but I was able to cover it with frosting. I lucked out and found a generic Cinderella doll at the $1 store, so I put the generic dress on the nicer doll and wrapped her in plastic from the torso down. I stuck the candles to her hands with artists gum. After the cake was cut I changed Cinderella back into the dress she came with originally and handed her off to my eager princess. The guests were wowed! This is such a great idea, and in all honesty it was very easy, and Im an ammatuer cook. ;-) UPDATE: Another great idea is to use Kelly dolls and insert them into cupcakes. Sinless Mississippi Sin

White cheddar non-existant here in the cheese state, so I used sharp instead. I also added some spinach, and like all spinach dips I thought it was ho-hum when it was hot but LOVED it after it sat in the fridge!!!

Baked Rice and Vegetables in Broth

I took the easy road to all of this. I was cooking for 2 adults (and MAYBE a toddler if she eats it, and she did!) so I used 2 boxes of Lipton seasoned wild rice, 1 14oz can of broth. I also used frozen veggies put in later in cooking as others suggested. Fast and easy, I will make it again! :)

Baked Vegetables I

This recipe was great! I used frozen seasoned red potatoe wedges, cooked them alone in the oven for 10 min, threw some frozen veggies in and added the oil and soup mix and violla, dinner about 10 min later!! :) I only used 1 packette of soup mix and I thought it was a bt salty so I wouldn't add the additional salt. This will be a staple at my house.

Wrapped Mexican Eggs

Maybe I did something wrong. Hubby said it was good, but I thought it was too mushy and needed a little some thing else, like maybe more veggies and perhaps beans? I don't know, I doubt I'll attempt this again.

Seven Layer Tortilla Pie

As with any recipe, I added my own touches. Used refried beans, added fiesta corn, used chipotle smoked diced tomatoes in place of salsa. My meat eatter hubby raved about it! This will be a repeat in my veggie household. :)

Easy Vegetable Pot Pie

What a truly fast and easy recipe. I used cream of muchroom soup and a variety of thawed out to room temp frozen veggies. I also used only 1 crust folded in 1/2. (Like a pastie) Next time Im going to try using reduced sodium soup, and I'll also add all the required milk. I didn't this time, and it dried out a little but was still great!!!

Vegan Mexican Stew

I added alot of variations to the recipe. It was a good base recipe to get me thinking though. :) I used a can of veggie broth w/ a packette of Taco Bell Chipotle seasoning and some cornstarch stired in, replacing the cumin. I also added lots of frozen veggies and tweaked it more.

Make Ahead Lunch Wraps

This was so fast and easy even I didn't mess it up! I used: 1 can Southwestern black beans (drained but didn't rinse), 1 can pinto beans, 1 can corn, 1 can tomatoes and chillis, 1 pouch of Success Longgrain Brown rice, Mrs Dash extra spicy, to taste. This still made LOTS! Garnish w/ sour cream. I also baked mine in the oven to melt the cheese and cook the beans. OH! And I used whole wheat tortillas too. :)

Veggie Pot Pie

The filling part tastes great so far! I used some frozen veggies, potatoes and beans, and I used Italian Mrs Dash, garlic powder, and I also used 50% roast garlic terryaki sauce with the soy sauce. I think that enhanced the flavor nicely. I added the cornstarch by eye slowly, so I can say I used more than what was called for, but not by how much.

Tofu Turkey II

I didn't know it was possible to kill a bird made of tofu, but I did. Mine too, went flat in the oven. I froze the tofu over night, to make it firmer as well. I gave 2 stars because the glaze was good. I'll use it for something else..... maybe.

Vegetarian Link Gravy

This recipe was sooooo yummy and EASY! I used the Morningstar farms breakfast patties instead of the links. I also used Italian (garlic herb) Mrs Dash in place of the pepper and sage. I poured the gravy over reduced fat Grands buttermilk biscuits. A very veggie treat! :)
