Cake Balls

These are so great and versatile! I used red velvet cake with cream cheese frosting and am dying to see how it tastes with german choc cake mix with the coconut frosting. I would recommend letting the cake cool before crumbling and mixing in the frosting. I used my hands for the mixing: messy but effective. I also refrigerated the cake balls for several hours before dipping them in the coating. A little less messy that way.

Tofu Lasagna

This is a pretty good recipe. I "healthied" it up a little bit more than it already is. I doubled the tomato sauce, added more spices (garlic, salt, oregano, etc), used 1 cup fat free ricotta, 1/2 cup low fat cottage cheese and also added half a pack of frozen spinach (thawed). I also used fat free shredded mozarella cheese. I turned out pretty tasty and now I have dinner all week (table for one)! I would definitely make this again for myself to have a nice, tasty, healthy meal but I don't think I would necessarily make it if I had dinner guests.

Pumpkin Chocolate Chip Cookies III

These were good but I must not be a fan of the pumpkin - chocolate mix. I wish they were raisins instead of chocolate chips. I did enjoy the cake-like texture and my friends seemed to enjoy them.

Runzas (Bierocks)

Really good! I've been wanting to make Runzas for a long time and finally got around to it. I used this recipe, but like other reviewers, I sauteed chopped onions with the ground beef and cabbage. I also added garlic powder, and lots of salt and pepper to give the filling good flavor. I brushed the dough with butter and sprinkled a bit of garlic powder and salt on top. These were a hit!

Twice Baked Sweet Potatoes

This was my first time making twice baked sweet potatoes and this looked like as good a recipe as any, especially b/c of the reviews... but i didn't really like these -- they are really sweet/rich and have more of a dessert-like feel. If I were to make these again, I would cut down the amount of cream cheese, probably by half. I would up the amount of spices. I also agree with many of the other reviews that you should not use the oil or foil.

Caramelized Brussels Sprouts with Pistachios
