Grandmother's Oatmeal Cookies

OMG! - I baked these for a church bake sale and they were a huge hit. And to top it off, my husband who isn't a big oatmeal cookie fan says that these were the best oatmeal cookies he's ever tasted in his entire life. Thanks for the recipe. I did make one additional change besides using butter as opposed to shortening, I also added 1/2 tsp. of baking powder and dropped by 1/4 cup measure to make jumbo cookies. I adjusted the temperature to 340 degrees F and baked for 15 minutes. They appear to be a little underdone but are perfect after they cool and set. - DELICIOUS!

West Indian Curried Chicken

Very delicious. However I did find that there were a little too many potatoes for me. Next time I will use a little less potatoes. Otherwise very tasty!

Sarah's Applesauce

It is extremely hard to get my children to eat anything even remotely healthy. But this applesauce was a huge hit. I eliminated the sugar and used 4 nice sized pink lady apples. I too allowed it to simmer for about 20 minutes extra to reduce some of the water content. Absolutely Delicious!

Spinach Brownies

My family wouldn't even think about eating spinach until I made these brownies. My son who is only one absolutely loves them. They can be a little salty therefore I omit the added salt from the recipe. And for fun, I bake them into individual cupcakes using a muffin pan and cupcake liners. Always fun for the children, and makes for easy serving and cleanup.

Tangy Chicken Fajitas

This was the first time I ever made Fajitas that didn't come from a box and they turned out better than I could have imagined. I used bottled Italian dressing and juice from one lemon (I didn't have a lime) and grilled the chicken instead of cooking in the pan. The grilled flavor and tangyness were excellent. I will definitely be making these again.
