Spanish Rice Bake

threw this together w/ a few "twists" .. used a dutch oven ...sauteed peppers/onions then browned ground beef, used organic fire roasted tomatoes, 2 tbsp mexican chili powder, a dash of paprika, brown rice, and threw in a can of chili beans (with liquid) about a cup more water and simmered for about 40 minutes. then threw it in the oven for about 20 min. topped w/ reduced fat mexican blend cheese, baked till melted and bubbly. finished w/ a few dollops of low fat sour cream and some corn muffins..delish!

Roasted Garlic Lemon Broccoli

Broccoli fixed this way is addicting! I cut broccoli vertically and use the stalks too. Toss in bowl, sprinkle w/ montreal seasoning, drizzle w/ olive oil and bake in oven. You won't be able to stop eating!!! My fave way to make broccoli.

Key Lime Pie VIII

wow! 1st time I ever made this pie! big hit at picnic! used 1/2 freshly squeezed lime juice, 1/2 key lime juice, lime rind, and used french vanilla pudding & extra creamy cool whip. everyone LOVED it! made homemade graham cracker crust! def be making this again!

Sweet and Sour Meatballs I

I've been making these for YEARS! i make my meatballs w/ a couple of slices of bread soaked in milk, about 1/3 c. of itallian bread crumbs, italian seasoning, a pinch of garlic powder. sometimes i omit the garlic powder and drizzle EVOO and put slivered garlic on the baking pan to bake in oven. i've never used the lemon juice but there isn't a morsel left in the crockpot when i make these!!! SCRUMPTIOUS! and so easy!

Beef or Chicken Marinade

so easy and so delish! i used boneless chix breasts which i'm always apprehensive about grilling --as they have a tendency to dry out...but this marinade made them so moist. i used fresh garlic and rice vinegar. used leftover chix in a salad --- delicious also!

Beer Margaritas

OMG! if i could give this 10 stars --- i would....made on a hot sunny afternoon...before we knew it...we consumed an entire bottle of tequila...saw double.....but ooohhhh so scrumptious! followed recipe exactly ...well..maybe adding a bit more tequila!!! great poolside cocktail! :)

Savory Grilled Potatoes

had friends over for dinner and these were a HUGE hit!! I used a bit more mayo b/c I had 6 potatoes and also drizzled a little olive oil over mayo mixture. Microwaved potatoes for about 4 minutes, let cool then sliced. sprinkled in about 2 tsp of ADOBO seasoning and used a bit more garlic....I really greased the foil and they came out really crispy and flavorful! can't wait till the next BBQ!

Tangy Grilled Pork Tenderloin

Great Flavor! I didn't have alot of dijon mustard so I used 1/2 maille's dijon and 1/2 hellman's "dijonaise" and added about a tsp of minced garlic. Grilled for time said and it was delicious! Not one bite left!

Apple Cole Slaw

Made this for a Memorial Day BBQ to go along side w/ ribs ---an excellent switch up to the usual slaw! I used equal amounts of green and sweet vidalia onion. I also sprinkled apples w/ a little lemon juice to prevent browning and added about 1/2-3/4 cup of sunflower seeds. I used 1 1/2 times amount for the mayo mixture. Not dry or too much liquid. I loved the crunchiness from the apples and onion and sunflower seeds. One of the best slaws I've ever had! Everyone loved it!

Cake Balls

Wow! I made these in October instead of a birthday cake for my daughter. My family went crazy for these! I used white cake w/ chocolate frosting and dipped in white and chocolate bark. Then drizzled opposite chocolate on each. Key is to def throw in the freezer/fridge after you add frosting to crumbled cake. Also, I used an Easter egg coloring wire dipper which worked really well. Time consuming but the reward is worth every bite!!! No one in my family wants plain cake anymore!!! Awesome recipe!!! UPDATE: I used a mini "dip crock pot" to warm up chocolate...works really well...you don't have to keep reheating!!!!

Di's Delicious Deluxe Deviled Eggs

These were one of the best deviled eggs I've made. Big hit for easter! I added about a tablespoon each of shallot and green onion instead of the onion called for. Used maille dijon - about 2 heaping Tbsp. and about 8 dashes of Frank's red hot and a pinch of cayenne. Excellent w/ a little "kick" :)

Awesome Pasta Salad

delicious!! Made this w/ Eddie's organic vegetable corkscrews. omitted pepperoni. added fresh mozz balls, green onions, kalamata olives, about 1/3 c of FF onions and used the kens' northern lite dressing w/ a sprinklng of freshly grated parm cheese & fresh parsley. just can't stop eating!!! Excellent!

White Chili II

absolutely scrumptious!! i altered according to other readers... added 1 orange pepper, omitted ginger and sage, thus adding 1/2 tsp poultry seasoning and approx 4 tsp. ground cumin. i also used 5 cans various beans, undrained -- 3 cannenelli and 2 navy beans. My family loved it!!! very tasty and easy!

Weekend Brunch Casserole

Scrumptious! made this for Christmas morning and everyone raved about it. The next time, I'll be adding some chopped onions and peppers. I also used sharp cheddar instead of mozz. and low fat crescent rolls. DELISH!

Hot Corn Dip

Delish! make sure to drain corns, tomatoes WELL! I added about a tsp of cumin and adobo seasoning and 2 tsp. chili powder. Next time I'm adding some green onion and melting some jalapeno jack cheese on top. Easy and quick!!! :)
