Party Pinwheels

These were very popular, although I made half with just ham and cheese, and half with veggies...and the ham ones went much faster! I added shredded carrots to my veggie ones, and they came out well. I didn't use the ranch dressing mix...I used some chimi-churri salsa packets I found in the cupboard...and probably would try to add a little more flavor the next time around. Edited to add: Have made these again, mixing the cream cheese with just chopped cilantro and some chopped serrano chile. Even used diced tomatoes this time as part of the veggies (without the seeds), and worked well. A new favorite!

Dirt Cake I

I made this recently for a Christmas party. It was easy to make (hard to mess up). Plus, I guess half of the fun is fooling people that it is a plant. I put it in a pot with some fake Pointsetta flowers, and nobody could tell that it was dessert. I'm in Mexico, and pudding isn't very popular here, so I was able to find regular pudding but not instant. I just prepared the pudding with the amount of milk noted in the Dirt Cake recipe, and after it was done cooking, I chilled it for about 3-5 minutes. Then I mixed in the Cool Whip. Worked out fine. I also reduced the butter and increased the cream cheese and there was no problem there either. I had leftovers because it made a lot of cake, but they were good for days...I never had the problem of the cookies soaking up the pudding. Thanks! This is definitely a repeater!

Cranberry Crunch Squares

I used this recipe to finish up some leftover cranberry sauce from Thanksgiving. (I made about a 1/2 portion of the recipe in a 8x8 glass baking dish.) It came out of the oven about an hour ago, and I've already sneaked 2 little squares! They taste good! I did the same process as many, split the crumbs to be half on the bottom, half on top. I probably would even put just a little more on the bottom, to give the squares a little more strength as you pick them up. I cut the butter down to a little more than half, and that worked out fine. I also added some dried cranberries to the cranberry sauce, and I'm glad I did. I wound up with a very thin layer of cranberry sauce when I spread it on, but it turned out to be more than enough. I wouldn't consider increasing the amount of sauce. So far they taste GREAT warm, but they need to cool some more before I officially cut them into squares. (edited to add: About half of them were stuck to the bottom of the pan, so I only got about 8 small squares and the rest was more "crumbly". Would line iwth aluminum foil next time.)

Sweet Potato Biscuits

These came out pretty good! I'm actually really pleased because I had a TON of leftover Sweet Potatoes from Thanksgiving, and just didn't feel like eating anymore potatoes! I used butter instead of shortening, and it was fine. I wound up with 9 bisquets in total. They were unbelievably quick to make. I just ate some with cream cheese spread on top...mmmm!
