Roasted Cauliflower Soup

I used this recipe as the starting place. I added carrots and celery but I think this is a very good basic recipe..actually more than that due to roasting the cauliflower.

Creamy Shrimp Scampi

It was very good. I didn't have any shallots, so I omitted those, and did cut the butter to only a quarter cup. I addded italian seasonings--maybe 1/2 tsp. We really enjoyed it and it was pretty simple to make!

Roasted Rosemary Chicken And Vegetables

My husband and I loved this recipe...ok, I couldn't make it without changing some of it. I added baby bella mushrooms and a small zuchhini, increased the garlic to 2 cloves and used fresh rosemary(from my garden) and served it on brown rice.

Eggplant and Zucchini Casserole

I was looking for a recipe to use some of my garden produce in -- zucchini, eggplants, tomatoes. My husband is not fond of onions(and I am) so instead of the 8 oz. of stuffing, I used a box mix with added onion and I also added baby portabella mushrooms(about 3/4 cup). My husband didn't even mind that there was no meat! I also used reduced fat cheddar instead of regular.

Apple Betty

Very easy to make-hardest part is peeling the apples! I cut back on the sugar and only use 3/4 cup. Can any of us just leave the recipes alone???? I had cinnamon ice cream which really tasted great.

Blueberry Crisp I

The first time I made this, we had people over for dinner and I had blueberries-chose this recipe for the simplicity. I used butter instead of margarine, but left everything else the same. Everyone loved it. I make whipped cream and that topped it. I loved the crisp topping and moist cake. I've also tweaked the recipe and using 1/2 cup sugar for the cake seems to work better since its not as sweet, but no one is the wiser..
