Buttermilk Honey Wheat Bread

I'm going to give this 4 stars even though my first attempt came out way too doughy. I did use lowfat plain Kefir in place of the buttermilk, but I don't think that's why it was so doughy. I used my bread machine to do the kneading and baked it in the oven. The flavor was fantastic. The next time I try this recipe (probably tomorrow becauase I HAVE to overcome failure) I will use less Kefir.

Saltine Toffee Cookies

These are excellent and easy! The saltines sort of balance out the 'too sweet' taste of typical toffee. The saltines do tend to go stale, so best to store in fridge and eat within a week.

Oregon Salmon Patties

Much tastier with fresh cooked salmon. Can't stand the soft bones you find in canned salmon. Very healthy, and the kids will eat this where they won't eat ANYTHING that resembles fish.

Beer Rolls

Super easy if you use the dough cycle on your bread machine. No hand-kneading and a wonderful homeade taste! These taste just like the rolls at the Roadhouse restaurant, and are delicious with whipped honey butter. Almost good enough to be dessert.

Easy Lemon Cookies

gets 5 stars for ease, quickness and good taste. They would be great with some lemon frosting, but tasted very nice alone. I also made using a spice cake mix and they were very yummy too.

Blueberry Pancakes

Very good and easy to make! Why bother with 'pancake mixes' from the store? You can modify these in many ways. I upped the fiber content by adding in some wheat bran, which gave it a hearty texture. I used blueberry greek yogurt which was wonderful. Raspberries are also very good in these.

Jam Filled Butter Cookies

few ingredients, easy to make. Versatile in that you can fill with many different things - including hershey's kisses. Somehow, I never got them small enough to make 36, (or maybe I ate too much dough!), and the dough didn't spread all that much for me, even that I only used 1 1/2 cups flour. I did end up with round cookies, so I guess I should have flattened them a bit before baking. I added lemon extract to the dough, and filled with lemon curd. I burned my mouth trying to eat one too quick, but they are very good!

Healthy Banana Cookies

the thing about calling something a "cookie" is that people expect dessert. To me, this is not really dessert. It was very tasty, but in a "healthy" way, you know? However, rolling it into a pan and making "energy bars" would conjure up a more accurate image in my mind. I dressed this up by subbing peanut butter for the oil. I added an egg for cohesion, and chopped pecans and choco chips for taste. I did add salt, because I could see how bland it would be without it. You just don't realize what salt does to the taste of a cookie! I will make these again, as I see plenty of options and potential as healthy energy food for my hiking and biking. I envision dried cranberries, coconut, bran, wheat germ, etc.

Raspberry Oatmeal Bars

sooo easy and sooo tasty! I mean, you COULD make these from scratch, but why bother? The butter-flavor yellow cake mix comes out tasting like buttery shortbread cookies. Everyone really like these, and I made them in about 30 minutes total.

Classic Bran Muffins

Can I give it more than 5 stars??? With a few modifications, this bran muffin comes in at under 100 cal per muffin. Subbing applesauce for the oil caused no negative impact on flavor, and reduced the calories and fat substantially. Replacing the wheat bran with crushed fiber one cereal also worked very well. I used splenda for half the brown sugar, and a cup of frozen wild blueberries in place of the raisins. This was a really tasty muffin!

Apple Crisp II

Gosh this was good! Much healthier without the crust, and used Splenda in the apples instead of regular sugar. Also soaked the apples in spiced cider for more moisture and flavor. Delicious.

Sweet Corn Bread

This made a very tasty cornbread muffin. I whipped up some honey butter and they disappeared during dinner. I usually end up throwing away some dried up corn bread a few days later, but NO LEFTOVERS with this recipe! The only modification was to use Splenda in place of sugar.

Banana Cake X

I LOVE THIS CAKE! It is the first banana cake that was more like cake than banana bread. It has a nice delicate fluffy texture just like cake. It is so easy and tastes fantastic. My favorite way to eat this is to poke it with many holes when it comes from the oven and pour warm pudding (vanilla or butterscotch) over it. The holes fill up with pudding, and there is no need for frosting, but it tastes wonderful with a scoop of vanilla ice cream!

Cake Mix Cookies VIII

As everyone else has said, very easy recipe to whip up with limited amount of time. For some reason, my first batch spread quite a bit, but the second batch baked up nice like I was expecting. The only difference was the first batch was on an insulated pan. I used PAM on both.

Mexican Turkey Burgers

This is a delicious recipe. I added 1 cup of black beans to the recipe for protein and fiber. I topped with fat free shredded cheddar and 99% fat free ground turkey breast. I topped with avocado slices, sour cream, and homemade salsa. I'm not sure where this recipe gets its nutrition figures though - by my calculations, with the fat free ground turkey breast, this recipe should make about 10 patties at less than 150 calories each.
