Whole Wheat Honey Bread

This bread was very dense and reminded me of bread I've eaten in Germany. Not light and fluffy, but a meal in itself. Maybe not for everyone... Not really a sandwich bread, but would probably make great rolls. I think I will try 1/2 whole wheat and 1/2 white flour next time to lighten the texture a bit.

Chicken and Dumplings III

This was great and really easy. I didn't use celery, like so many other people. The dumplings cook best when they're made pretty small, if too big they can be kind of doughy.

Russian Tea Cakes I

Super easy, delicate shortbread taste. Made with pecans instead, they tasted just like pecan sandies. Dough is crumbly but very easy to work with.

Cranberry Pork Chops

I guess I'll have to try these again with some modifications. The meat did come out very tender, but I found the sauce to be overwhelmingly sweet. I guess I'd like something a little more balanced between sweet and savory. It certainly didn't need sugar in addition to the cranberry sauce and apple juice. Next time I'll use water to thin it out a little, and maybe some brown gravy mix at the end to balance it out.

Blueberry Zucchini Bread

I am not sure what happened... I used an aluminum pan and the bread was pretty doughy still after the time was up. I should have baked it longer but the top seemed well cooked so I turned it out onto the counter only to discover the bottom was still pretty much uncooked. I think next time I will used a glass pan and see if that helps - at least I can see through to the bottom to check for doneness! I am giving it 4 stars because I believe this was operator error and it was still delicious.

Mexican Chicken Corn Chowder

This was really good. I used my crockpot to simmer the chicken breasts for a few hrs in the bouillion/cumin/garlic mix to eliminate the sauteing in butter step, which saved a few calories and effort. I used whole milk instead of 1/2 and 1/2. Skipped the cheddar, but put a dollop of sr cream on top which was pretty tasty.

Cranberry Orange Wheat Scones

I rarely give 5 stars. When a recipe is pretty darned good and worth repeating, I'll give it 4 stars. This recipe I would give even more than 5 stars! It is a simple recipe that yields really spectacular flavor and texture. I did not have OJ, so I used more milk. I didn't have orange zest, so I used 2 Tbs of orange extract, which was more than plenty. I also used the orange-essence dried cranberries. I did substitute wheat bran for the wheat germ, and opted for 1/2 white flour 1/2 whole wheat flour. The texture was fantastic, flavor wonderful. Delicious with honey butter.

Oatmeal Raisin Cookies I

You know, I love a good oatmeal raisin cookie. However, I was out of raisins and substituted orange-essence dried cranberries, and I may never go back! They were just absolutely delicious. This is a softer cookie - not a crisp cookie. I like both kinds, depending on my mood. I also liked the size of this batch - about 24 good sized cookies, so not so many that they'll go bad before we can eat them. Very yummy iced with cream cheese frosting, still warm with a glass of ice cold milk. I substituted all of the regular granulated sugar with Splenda, and it didn't hurt the appeal at all!

Cream of Pumpkin Curry Soup

This is a delicious soup. I did make a few changes, not because it is a bad recipe, but because I'm on a diet and I'm always looking for ways to alter full-fat recipes without sacrificing too much taste. I did make this soup with only 1.5 tablespoons of butter - I found that the onion sautes fine in that much or even less. That alone saves 150 calories and 15g of fat off the total recipe. I also used 1% milk and a tiny bit of cornstarch for thickening, without great detriment to the taste. That also saves 300 calories and 28g of fat. In the end, my product has 120 calories and 5.6g of fat, and I think it tastes just as good!

Spiced Applesauce Bread

MMM. Wow! Fantastic! I used 1/2 white and 1/2 whole wheat flour, and instead of 1 cup of white sugar I used 1/2 cup brown sugar and 1/2 cup splenda. I also added 1/2 cup of glazed walnuts and replaced the individual spices with pumpkin pie spice. I reduced the oil to about 1/4 cup with no effect on quality or taste. This stuff is heavenly and pretty darned healthy.

Glazed Nuts

Glazed nuts, particularly almonds, are very popular during Christmas in Germany. I really like these with a bit of salt to offset the sweetness.

Babe Ruth Bars

Wow! I used up two 'healthy' cereals that my family wouldn't touch with a 10' pole and they gobbled up the cookies. I used some high fiber O's type cereal and some high protein granola. Very tasty - not low cal at all, but for my long hikes and bike rides, they're great.

Tofu Chocolate Pudding

First off, if you hate tofu, tofu pudding probably won't be your thing either. This is my second time reviewing this recipe. The first time I used the firm tofu and never did end up with a smooth creamy texture, the flavor was mostly tofu-ish and very chalky. This time around however, I used silken tofu. It blended perfectly smooth and creamy and had an ever so subtle taste of tofu, but barely noticeable. For those of you considering this recipe, I highly recommend using silken tofu and blending well in a food processor for best results.
