Moroccan Couscous

I was only able to find Israeli couscous and it was fabulous!! I will make it again with the larger, Israeli variety. Great texture. You just need to follow the box directions and simmer, covered for 12 minutes once you add the liquid. All other ingredients/measurements the same. It got RAVE reviews.

Yogurt Chicken

Delicious. The yogurt/lemon mixture gave it a nice yet subtle tang. I used chicken thighs (much prefer), and also added some parmesan cheese and red pepper flakes to the bread crumb mixture. It still needed a little more kick, so I will add more pepper flakes next time.

Indian Cauliflower

Fabulous, healthy dish with a few modifications. Per other reviewers, I chopped the cauliflower into small florets and tossed with turmeric oil before baking. Even in small pieces, the cauliflower is better cooked for 40-45 min until lightly browned. I used only 2 tsp of garam masala and added 1 tsp of chili powder for heat. I also added a pinch of sugar to mellow the acid from the tomato puree, and also added about 3 Tbsp of half and half to give the sauce a little richness. Superb! Will definitely make this again.

Pesto Tuna Salad with Sun-Dried Tomatoes

Great alternative to the traditional method. I took it a few steps further and added chopped artichoke hearts and kalamata olives since I had them on-hand. I also sprinkled some red chili flakes for a little zip and used lowfat plain yogurt instead of mayo (figured I dumped enough oil in it!). Quite nice!

Quinoa and Black Beans

I love this recipe! Super healthy and delish. I followed pretty much exactly, except that I used frozen roasted corn from Trader Joes, which added a nice flavor. Oh, and I also used only one can of beans and that was perfect. I like to serve on warmed corn tortillas with a little sour cream and sliced avocado. Mmmmmmmmmmmm.

Holiday Chicken Salad

This is a really nice chicken salad recipe that is easliy adaptable to different tastes. I didn't measure anything-- just threw the ingredients together in a bowl and mixed. As suggested in previous reviews, I replaced the bell pepper w/ apples and added halved grapes. And instead of dried cranberries, I usede dried cherries for a deeper, sweeter flavor. I also used candied walnuts from Trader Joes. They're slightly sweet, and give a nicer crunch. In addition to regular paprika, I dusted in a little spicy paprika. Gave it just a SLIGHT kick. Great lunch food eaten plain or with lettuce. Will make it again!

Sally's Spinach Mashed Potatoes

I made this for a friend's birthday dinner along w/ pork chops and it was a huge hit! I subbed nonfat, plain yogurt for the sour cream, and you'd never know it. Next time I'll crush some garlic into the potato mixture. It's also a great make-ahead dish. I prepared it in the morning, put the mixture in a casserloe dish w/ grated cheese on top and refrigerated. I used a sharp, white cheddar which made for a nice presentation-- more elegant than yellow cheddar. It took a little bit longer in the oven to cook, but was really easy. It's a keeper!

Delicious Chickpea Curry

This was a delicious, healthy and easy recipe. It takes awhile to simmer, but the prep work isn't intensive. The yams, pears and raisins add a nice sweetness-- but it's not overly sweet. It packs quite a punch, though, so if you don't like it spicy, cut down on the cayenne. I used a 32oz. container of vegetable broth from the store instead of the boullion, and forgot to include the cilantro, but it turned out lovely. The dish was great paired with naan bread. Definitely a keeper!

Baked Ziti I

This recipe is so simple and so delish. To sneak a little more nutrition in, I sauteed chopped yellow squash and bell pepper along with the onion before adding the pasta sauce (I nixed the meat). Then to the sauce I added a bit of wine and some red pepper flakes to give it a little punch. I had a grated cheese blend of cheddar, jack and mozzarella that I used instead of just mozzarella. It turned out GREAT! Next time I may even add more veggies.

Bermuda Spinach Salad

Wow. I was licking the bowl this was so good. The dressing is to die for. Has a distinct onion flavor, but the sugar and acid from the vinegar balance it out nicely. I used red onion (which gave the dressing a pretty pink hue), but will try a sweet onion next time. Also added a smidge of bacon grease to the dressing and threw some tomatoes into the salad. Tomatoes added great flavor and color. Delish!!

Swiss Enchiladas

Wow-- these are fabulous! My boyfriend devoured them, saying they were the best enchiladas he'd ever had. I liked the idea of adding cream cheese (as if it needed more fat!), so I included some in the chicken mixture. I also threw in some thawed, chopped spinach. And instead of jack cheese I used Swiss. I also reduced the amount of cream by nearly half, and it was enough. Everything worked wonderfully and I will absolutely make these again.

Erin's Indonesian Chicken

Great dish! I didn't cook the rice-- just the green beans and chicken. Peanut sauce was delicious. I've made peanut sauce before, but this is the best I've made. Quick, easy and tasty dinner. I omitted the green onion and chopped peaunuts-- came out great! Will definitely make again.

Macadamia-Crusted Sea Bass with Mango Cream Sauce

This was an unbelievable hit!! I cook quite often, and my boyfriend went crazy for this-- his new favorite dish. Said it was as good as something you'd find in a top restaurant. Was a little time consuming to make, but certainly worth it. I used pacific sea bass and it came out perfect. Next time I'll invite people over to share this dish. Perfect for company!

Best Spinach Dip Ever

This was excellent-- and made enough to feed a bunch of hungry women. I actually didn't read carefully about refrigerating it for 6 hours, and only had time to let it sit for about 2. It still came out great. It just needs to stand long enough for the leek soup to soften, because otherwise you bite into hard pieces of dried leek. I also more than doubled the amount of spinach it called for. I'll definitely make this again!

Mahogany Chicken Wings

These were to die for. I have a great wing recipe that I've enjoyed for years, but these mahogany wings just took their place! Perfect blend of sweet and spicy-- I might even add a little more chili sauce next time. I actually marinated the chicken in the sauce for a few hours, but when I cooked them I forgot to baste with extra sauce. They still turned out marvelous. Will definitely make them again!

Yam and Apple Casserole

I brought this to a Thanksgiving potluck at work and it was a total hit! I was forced to substitute bottled spiced cider for the apple juice, so I omitted the spices and lemon (since those ingredients are already in the cider). It came out great! Very simple-- and I widdled 4 ingredients down to 1.
