Tofu and Veggies in Peanut Sauce

I am currently trying to eat vegan so this recipe caught my attention. The only thing I changed was I swapped out the agave for two packets of stevia, and since the recipe didn't specify vinegar, I used rice vinegar to stay with that "asian" theme. The recipe was absolutely wonderful.

Vegan Bean Taco Filling

I made them just as the recipe suggested. Maybe I'll try making my own salsa next time to use. Something wasn't quite "right". Can't put my finger on it. I LOVE black beans and LOVE Mexican themed dishes, so I was excited to be making it. Was a little disappointing.

Healthier Oven Roasted Potatoes

I used course kosher salt instead of regular salt. I suggest putting the ingredients in a ziploc bag to allow for even distribution on the potatoes. The coating is so good until you can enjoy just a few and eat off of these for an entire week.

A Good Easy Garlic Chicken

I am someone who wants to be in love with cooking. My obstacle is that I am horrible when it comes to cooking any type of chicken or fish dish. This looked so easy until I HAD to try it. It was so simple and so good. I used olive oil in place of the butter, but my dish was succulent and juicy. Thanks so much for helping me to fall in love with cooking.

Burger Spice Rub

I used this as a rub on portobello mushrooms before roasting them and making mushroom burgers. I sprayed a little olive oil on the mushroom so the rub would adhere. I did swap out the sugar for splenda and cut the recipe wayyy down as I am a cook for "one". Lastly, it was very easy to store. I was able to use it about 2 weeks later with no problems. Can't wait to try it again.

Channa Masala (Chickpea Curry)

Had this dish at an Indian restaurant in downtown DC and was determined to duplicate it. This recipe did not disappoint. It's easy and delicious!
