Nanny's Bucka
This is a really simple and yummy recipe. I especially like it because it's not as messy as regular pancakes for my son. Some said it's bland, but so are most regular pancakes which makes it perfect for a variety of toppings. Also some people said it was doughy. It is a bit more dense then pancakes because of the eggs, but if you make sure to fully cook it till it starts to slightly brown, it should be firm vs. doughy. It's almost crepe like in flavor. My husband calls it pancake scramble.

Orange Roughy Parmesan
This was so good, even my 5yr old gobbled it up. It was really easy and quick too. I used plain bread crumbs as that's all I had, and red snapper. I think I'll try using a little less butter as I expected the breadcrumbs to be a little more browned. I may have just used too much since I had to increase the potion size. We'll def make again.

Brown Sugar Banana Nut Bread I
Even with 4 bananas something else (maybe the brown sugar itself) overpowered the banana flavor. The texture was also not what we're use to in a banana bread. The really odd part was the black flecks you usually get with banana bread, were no where to be found.
