Panna Cotta

Reviewed: Feb. 15, 2012
I made this for a dinner party on Valentine's day. I poured it into silicone muffin pans (12 heart-shaped portions). I was able to turn them all out onto a pan, and then move them to plates individually with a metal spatula. I substituted half and half for the cream, and I added an extra 1/3 cup because of the reviewers who complained that it was too stiff and not creamy enough. It held together but was very soft, so next time maybe I will make it as written and see how I like it. I also made a simple blackberry sauce to go with it: Blackberries + sugar (to taste), blended and strained. This I poured into a squeeze bottle so I could drizzle designs around the edges of the plate. It was very easy, but looked fancy and was delicious!

Pan Fried Swiss Chard

Reviewed: May 24, 2011
I thought this was delicious. And I count anything as a success if it gets my husband to eat leafy green vegetables. I did follow the advice of another reviewer who chopped up the stems like celery and sauteed them for a little bit before adding the leaves.

Cranberry Kuchen

Reviewed: May 31, 2010
This was the most unusual "cake" I have ever made, but it was successful and yummy. The dough was very sticky and loose after rising, but I was able to pat it in the pan. I cut the recipe in half to make only one pan, and I also substituted a can of whole cranberry sauce for the cranberry filling. I don't think the substitution messed up the recipe, and it definitely saved time. It would be interesting to try the recipe as written, next fall when fresh cranberries are on sale, just to compare. The top did not brown after 30 minutes, so I put it under the broiler for just a minute until it took on a more golden color. Everyone loved this. I served it as dessert for a big family dinner of German foods, but I think it would be nice for a brunch too, because it's not too sweet.

Hawaiian Sweet Bread

Reviewed: Aug. 25, 2005
This bread turned out delicious and fluffy, and was not hard to make. At one point I was sure I did something terribly wrong, because the dough that came out of my bread machine was so sticky and almost runny, but it baked just fine, and all my guests enjoyed it.
