Seafood Cioppino

This was enjoyed by my crew. I skipped the mussels and clams and opted for a frozen seafood mix from Trader Joes. I supplemented with some extra shrimp and cod. I thawed all of the frozen seafood in cool water before adding it to the soup base.

Beef Burgundy I

My kids loved this. It was pretty soupy so I reduced it a bit more than directed. I also added some brocolli to it. We served it over rice.

Chicken Andouille Gumbo

I could not make the roux work for the life of me. I was trying to make this dish gluten free and it just wasn't happening. I instead started with cold liquid, added my gf flour and then slowly heated it. The sausage was too spicy for my kiddos so I won't make it again. I think it is more an issue on my part as opposed to the recipe itself.

Pasta Pancetta

My family really liked how light this dish was and yet exploded with flavor. The shallots cooked up so sweet. I used a full cup of chicken broth to ensure enough sauce. I am gluten free and thus must always cook up not only the regular pasta but also the gf variety. I wanted to have enough pan liquid for both pasta types. Definitely a repeat meal.

Mushroom Risotto

Not a spoonful of this hot number was left! I used Aborio rice and used greater amount of celery and mushrooms to add volume. I don't usually have whole milk so I substitued fat free milk and reduced it by 1/4 cup and increased the heavy cream by 1/4 cup. Next time, I want to experiment with different varieties of mushrooms and some other spices as well.

Perfect Chicken

My kids totally loved this dish and are requesting it again. I steamed up some french green beans and placed them over a bed of steamed rice. I used boneless chicken breasts instead of thighs. After taking the chicken out of the oven. I sliced it up and then topped with the sauce. I will definitely repeat this mean and next time try some different mushrooms and a larger quantity than called for in the directions.

Aioli (Garlic Mayonnaise)

It did not set up despite following recommendations of other posters. I instead threw it over my salmon and used it as a baking marinade. The flavor of the salmon was tasty with it.
