About this Cook
I am someone who loves food and loves trying new recipes. I tend to stick to the comfort types of food, but I am also willing to try new things. However, I must admit, I despise mushrooms!
My favorite things to cook
I LOVE LOVE LOVE anything pasta. I also enjoy cooking casserole type foods. I like the quick, easy, and affordable foods that nourish and fill up my family. I also love chili's, soups, salads, and seafood.
My favorite family cooking traditions
I associate special foods with holidays. My family and I have our traditions. We always do cornish hens with wild rice on New Years, mini quiches for Christmas breakfast, the whole shabang for Thanksgiving. I look forward to special holiday traditions every year, as well as enjoying throwing something new into the mix.
My cooking triumphs
Anytime I cook something new that people love, I consider that a triumph!
My cooking tragedies
I once made Kool-Aid with salt - honest mistake. I had just moved in with my boyfriend and he put salt in a canister (I figured it was an extra jar of sugar.) I don't really grill or bbq, my first attempt was chicken on a charcoal grill. I didn't think there was enough heat, so I kept squirting lighter fluid on the coals. I ended up with lighter fluid raw chicken. YUCK!!! (I don't grill now)

Mexican Corn on the Cob (Elote)
Best corn on the cob I have ever had. And I've had a lot!!! The butter is a must, the mayo is just a wonderful creamy note, and the cotija cheese and lime send it over the top!

Potato Latkes I
These were so good and so easy! This was my first time making them, and they were delicious! I just used the large holes of my cheese grater to shred the potatoes. My 7 year old helped me make them and he LOVED them! Great recipe!

Beef Enchiladas II
So good! So easy! I had leftover taco meat so I used that and canned enchilada sauce. Will definitely make again! Thanks for the easy recipe.
