Pan de Muertos (Mexican Bread of the Dead)

easy and yummy. I actually brought the recipe down to 8, just to try it and it worked out wonderful. Loved the glaze and sugar topping, omitted the anise (I didn't have any) but thought the orange added a nice flavor. Much like a cinnamon roll with a different flavor.

Pumpkin Apple Streusel Muffins

Yummy! I actually subbed squash for the pumpkin (to use it up) but kept everything else the same. Loved the apple chunks, and while it was a bit oversweet, loved the streusel topping. May decrease the sugar next time and keep the topping.

Spiced Butternut Squash Muffins

Tasted great! But were doughy and a little dense, but we still finished them off. Will keep trying to figure out a way to make them less doughy, maybe mini muffins like someone suggested.

Cream Cheese Mints

yummy! Used stand mixer, and about 4 oz. of cream cheese and 4 cups of sugar. Mixed food coloring in before sugar and got a nice even color. We rolled them and then cut them like in the picture, but excited about all kinds of ways to form them.

quick simple, had no problem with consistancy if I added a little more flour. Used the egg and milk mixed together trick also. Made 36 small heart shaped scones.

Grandma Johnson's Scones

yummy! So good and easy. Followed to a T, except subbed dried blueberries for raisins. Made some triangle, but mostly used a heart shaped cookie cutter. super cute and easy!

Cranberry Pistachio Biscotti

Linguine with Clam Sauce

Excellent and easy, even my kids liked it. I try and use as many fresh ingrediants as possible to offset the canned. I start by melting the butter, then adding the fresh garlic and I use olive oil. Then I add a little lemon zest and fresh squeezed lemon along with the juice from the clams. I omit the basil, but add fresh parsley and a little pepper. When noodles are al dente, add the Whole Baby Clams (not minced) and then add drained noodles. Toss together over heat and top with lots of fresh parmesan. Yummy!

Creamy Hot Cocoa

I eliminated the half and half (didn't have any) and vanilla so really just used the cocoa, sugar and salt with milk. Followed suggestions and used 1/2 a cup. Yummy!

Chicken Quesadillas and Fiesta Rice

cooked chicken in crockpot with water. Used this broth for the rice. Added chedder cheese and milk to shredded chicken along with some taco seasoning. Sauted onions with oil. Added half the onions to shredded chicken. added 1 1/2 cups of rice and browned. Added chicken broth and a little extra water to equal 2 cups. added a little salsa and left un covered to be done quicker. Added chicken mixture to tortillas and bakes as directed. YUM!

3 mini boxes of wheaties, made in a 9x9 pan. baked 25 min. cut immediatly. yummy. Will try adding choco chips and raisins next time.

Slow Cooker Chicken and Noodles

tooke the advice and added regular egg noodles the last 15 minutes. I did not use chic broth, just water. Addes some seasonings, pepper, poultry, garlic, parsely and salt to taste. Also aded chopped carrots. Super easy, love being able to use frozen chicken and set it and come back for supper!

Colleen's Slow Cooker Jambalaya

super easy, was excellent! I chopped and prepped everything but the chicken and shrimp the night before. Threw it all in the crock pot. In the morning threw in a couple frozen chicken breasts and later shredded. Added rice directly to crock when added frozen shrimp. Had to add about 1/2 a cup of water for the rice.
