Grandmother's Buttermilk Cornbread
Only made one slight change (sour cream for buttermilk) because I didn't have buttermilk, but had a HUGE container of sour cream that I needed to start using. With that one substitution, & everything else done as written, this was a delicious & easy cornbread recipe. Other recipes have been too sweet, too gritty, not sweet enough, or just too dry - this is just about as perfect as homemade cornbread gets!! Paired great with homemade navy bean & ham soup on a cold Montana evening :)

Carrot Cake
Yummmm! After reading thru several recipes & plenty of comments, I chose this one because of the pineapple & coconut (and no raisins). Other than sautéing my carrots in 1Tb coconut oil, plus 1 tsp sugar & 1tsp of pineapple juice, I followed the recipe for both the cake & frosting exact. It turned out fabulous!! Baked for the recommended time of 55 mins (for 9x13) and the cake turned out completely cooked & oh-so moist & delicious! Why bother with a box cake when this is so yummy & easy :)

Extreme Chocolate Cake
I'd never mastered a chocolate cake & frosting until I found this recipe! Per other reviewers, the only changes I made was to use 1 cup hot coffee in place of the boiling water, I used cocoa to 'flour' the greased pans, & personally, two layers is fine for me, so I didn't attempt to split my cakes horizontally; everything else I followed exact! My cakes didn't overflow & I didn't have trouble removing from the pans (I made sure to grease them well). I thought it was a lot of cocoa & powdered sugar for the frosting, but I gave it a go anyway and WHOA! is it good! Not too sweet or gritty as long as you follow instructions to alternate the dry & wet ingredients. As others have noted, this cake tastes better the 2nd day - even better the 3rd day, if it lasts that long! I made it Tuesday for a birthday party on Wednesday, and was getting requests from family by Sunday to 'please make it again' - and since they said please. . . ;) Both times it's turned out AWESOME ! Definitely my go-to chocolate cake recipe from now on.
