THESE SUGAR COOKIES ARE GREAT!!! I highly recommend this recipe. I added 1 teaspoon of pure hazelnut extract (you can add any other flavor, such as lemon). I probably would add another teaspoon of the vanilla extract, because the flavor is imperceptible.
I have a suggestion for those of you who have little counter space (since this recipe yields ALOT of dough). I would immediately roll out the dough in batches between sheets of waxed paper rather than chilling balls of dough overnight. I froze layers of rolled out dough, and it was so much easier to work with! If you only refrigerate the dough, it will soften very quickly (in minutes) and become impossible to work with because it is incredibly sticky. So... freezing this dough is the only way to go. Using wax paper cuts the mess.
If you do try the wax paper, peel it quickly away from the dough, sprinkly confectioner's sugar over the top, place the wax paper back on, flip the dough over, and quickly remove the wax paper from the other side. Start cookie cutting the dough quickly! The cookie shape will "melt" and will become difficult to remove from the cookie cutter.
If you freeze, "flour" with sugar (not flour), and cut as fast as you can, then these cookies will retain their shape and come out tasting great.
As another suggest: I also baked them on parchment paper.
