Kickin' Collard Greens

I have eaten collards fixed the traditonal southern way all my life, but I will never fix them that way again. They are so much better cooked this way. I put a dash too much red pepper, next time a little less, but they are so flavorful and delicious. Even my daughters ate them ages 9 and 13!

Fruited Cranberry Relish

I had a similar version of this at my work and tried to find it here and this is the recipe I tried. I made it as stated and tasted it. but to me it was still too tart so I added another apple and 1/2 cup of brown sugar and it was very good. It was still a little tart, but I think it will sweeten more over time. We ate it immediately. I had some left, so I will try it again tomorrow. My daughter said it was good with pecans in it too. I think next time I may add a little orange zest to it too.

Coconut Sour Cream Cake

Oh My Gosh! This cake is to die for! I used yellow cake mix and omitted the almond extract. By day four we were fighting over the last couple of slices. I cut my cake layers with thread and it was easy as pie. This was my first time cutting layers, way easier than I thought. We have paid to have this cake made for us, never again. I will be making it myself for now on.

Pepperoni Dip I

Very good, I left out the peppers and onions b/c kids were there and it was still good. I think you could play with this and add all your favorite pizza toppings and it would be great. I cooked a french bread loaf and served it with that. Everybody ate it all up!

Party Pinwheels

I left out the pepper and used green olives and added chopped fresh tomatoe and cucumbers and it was a hit. I had a couple of people ask me for the recipe. I had no trouble assembling the wraps at all. I made them the day before and cut them right b/f the party.

Slow Cooker Turkey Breast

This was the best turkey breast I've ever fixed. It was so easy and so yummy. I'm making a cassarole out of the left overs. I usually chunk them b/c they get so dry, but not this turkey. I will try a whole chicken this way next and see how it comes out.

Easy No Bake Cookies

I just made these with my 6 yr. old and they were easy and good. I reduced sugar to 1 cup, may go 3/4 next time b/c these were plenty sweet. I also used vanilla flavor pudding and added 1/2 tsp. cinnamon, and 1 tsp. of cocoa powder. I was out of vanilla flavoring, but I figured since it was, "vanilla" pudding I could get by with it. I did cook my mixture for 3 full minutes as some suggested and they set up perfectly. I left them in the pot, covered for 10 minutes before patting into cookies. That way the oats got a few extra minutes to "cook".

Dill Pickles

This is my first time trying pickles and I was soooo happy with these! I opened my first jar 4 weeks after pickling and boy were they good! This recipe is easy and delicious. If you are thinking of trying pickling and are scared, don't be. This recipe is great. I gave mine a boil bath for 5 minutes and that was enough to seal the jars, and still leave the pickles crunchy. Best dill pickles EVER!

Egg Drop Soup II

This was okay. I put two eggs in and it was too much. Next time I will stick to one. I also dipped a fork in the egg and dripped it in the broth. It looked pretty, but may have cooked too long.

This was super easy to make and very good. It was very hard to clean the cheese off of the muffin pan however. I will try to find a way to keep it from sticking next time.
