Holiday Guacamole

Homemade guacamole is so much better! And this recipe is fantastic. I made a bit more than the recipe called for: 6 avocados, 3 finely diced pears, 1 finely diced small onion, about 2 cups of green grapes that I quartered because they were huge, the seeds from 1 pomegranate, the juice from 1 large lime, and two de-seeded serrano peppers. I had no idea how many seeds one pomegranate produces, but found just 1 to be plenty for my liking. And I'd be careful with the serrano peppers unless you know you like things hot. I only used two (and de-seeded them as well) to make sure my spice intolerant family members will actually be able to eat it. I can't wait to bring it to our Christmas festivities!

Mini Cheesecakes

I followed the cheesecake part of this recipe exactly. But used the mini phyllo shells in place of the vanilla wafers. Then drizzled a little caramel on top and finished with crushed bits of either Snickers, Heath, or Reese's PB Cups. I also used Neufatchel cheese to cut some of the calories and fat. I took all of them to a holiday potluck and they were devoured. Many rave reviews, multiple requests for the recipe, and they were so easy! I will definitely make these again.

Amazingly Good Eggnog

Excellent taste and a creamy consistency. I really like the fact that it's cooked too. I used spiced rum and fat free half and half. Fantastic.

Original Irish Cream

Wow. I will not be buying $25 bottles of brand name Irish cream ever again. This was so easy. I eliminated the almond extract altogether. And I decreased the whiskey to 1 cup. I also used fat free half and half instead of heavy cream. Yum!

Slow Cooker Pineapple Pork Roast

Excellent! I made a number of changes though. Used pineapple tidbits. Reduced the cranberries to about half. Reduced the seasoned salt to just a pinch. Added half a large onion, chopped. Added half a cup of teriyaki marinade. Added about a tablespoon of dried minced garlic. Added about a quarter teaspoon of dried thyme. And a pinch each of cinnamon and cayenne pepper. Served over rice. I will definitely be making this again.

Baked Basil Fries

Excellent flavor! And a much healthier way to make fries with dinner. I used a crinkle cutter and they almost look professional. I'll definitely be making these on a regular basis. The only thing I'll change next time is add more garlic powder. And maybe some chives. Yum! Thanks!

Deep Dark Fudge

Perfect! This was a very easy recipe and turned out awesome. I used one 11oz bag of Dove dark chocolate squares because I'm not a big fan of Hershey's chocolate. The most tedious part was upwrapping all the individual chocolate squares, which I then chopped in the food processor a bit so they'd melt faster. I also used light butter. You can't mess this one up! I cut my squares 8 across and 8 down for 64 servings.

Frosted Banana Bars

These are basically like a dense banana bread with frosting. I used three very ripe bananas which came to a little more than the 1 cup called for. I topped them with a very thin layer of Pillsbury cream cheese frosting and sprinkled finely chopped walnuts and Nestle mini semi-sweet chocolate chips on top. Looked great and tasted fabulous!

Champagne Punch I

I initially liked this a lot better with Sprite instead of ginger ale, but have since discovered that the soda and the sherbert aren't necessary ingredients at all. Use about 2/3 sweet red wine with 1/3 spumante champagne to make a wonderful punch by itself.

Orange Fluff I

I've loved this salad for years! It's a refreshing snack and/or a great alternative to breakfast cereal. However, I only use one small package of sugar-free jello and I often eliminate the whipped topping altogether which cuts down the calories. Personally, I also prefer the consistency when made with large curd cottage cheese simply because it's more identifiable and doesn't get lost in the mixture. Makes about 12 half cup servings (without the whipped topping).

Roasted Pumpkin Seeds

Excellent! Far superior to any of the packaged pumpkin seeds you can buy at the grocery store. I added some garlic powder and my only batch was gone by the end of the next day. I've vowed to buy many more pumpkins next year just for the seeds!

Creamy Peanut Butter Fudge

Tastes pretty good but I found the texture too grainy and softer than I'm used to for fudge. Looks nice with melted chocolate drizzled on top and swirled with a toothpick for a marbled effect.

Holiday Wreaths

Very festive looking but I found it difficult to form into wreaths not only because the marshmallow starts to stiffen but also because the Corn Flakes make for a much less dense mixture which doesn't hold together as nicely. They taste ok, but in the future I'll just be sticking with Rice Krispies.

Oreo™ Cookie Bark

This recipe is great! And so easy. I used the mint and creme oreos and sprinkled the top with red sugar while the mixture was still warm. It's perfect for the holidays (or any other time of year) and tastes fabulous!
