Asian Lettuce Wraps
I've never had Asian lettuce wraps before so I have nothing to go by, but these were excellent! I did use ground pork per recommendations, but it would be great with whatever meat you choose. Only had dried ginger so went with a few shakes of that. Made a double-batch of a sauce recommended by the second reviewer and others (soy sauce, rice wine vinegar, etc) and drizzled that over the meat mixture before rolling. Had some sweet chile sauce on the side for dipping, as well. Used iceberg lettuce (had on hand), and it was quite messy making a wrap. Will try one of the other recommended lettuces the next time. Chicken Enchiladas II
Can you say yum? These were really good. I sauteed yellow onion at the start, but before serving sprinkled with green onion. Went extra on the garlic powder and added about a tsp of homemade taco seasoning mix, to bump up the flavor a bit. I put two enchiladas on my plate, but one was plenty...they're very filling! Had it with refried beans and sour cream on the side. Just add a brewski, and life is good! Thanks for a great recipe teppij!

Brazilian Black Bean Stew
Made a half version to try. I had tomatoes that needed to be used, so I subbed those for the canned. I used chicken stock in place of the water. I also added a peeled, chopped carrot. No mango on hand so had to forego that. Not much thickness to the broth, but after a day or so in the fridge, it was great served over rice. Also, I had some turkey kielbasa on hand which I pan-fried and served with it. Yummy! Thanks CRVGRL, a very good and healthy recipe!
