Pecan-Coconut-Chess Pie

We're not much for pecan pies but this one was excellent. Made 2 for our church bake sale and they were gone immediately. Made one for Thanksgiving and everyone who tried it loved it.

Italian Green Bean Chicken

This was an excellent dish. My family loves garlic so I used about 6 cloves of minced garlic and added parsley and oregano along with the basil. I tossed with penne pasta and sprinkled Asiago cheese on top.

Slow Cooker Country-Style Spareribs

I wouldn't call this a barbeque recipe but it was tasty. I added about 3 tablespoons of cornstarch mixed with enough water to dissolve cornstarch and added it to the tomato sauce to thicken the sauce. I also added a few generous shakes of granulated garlic and used boneless country style ribs. I will shred the left over meat and use it with the sauce on sandwich rolls.

Fresh Blueberry Pie IV

The best blueberry pie ever! I used three pints of blueberries so the pie was piled very high and held together even after it was cut. The ratio of sweet to tart was just perfect. This is definitely a keeper!

Raspberry Sour Cream Pie

Absolutely delicious. I took these pies to a picnic on Saturday and today, Tuesday, someone came to my office just to say how great the pie was. I did use 2 pints of berries which was more than 3 cups and will probably add another half pint when I make this again.

Slow Cooker Chicken Parisienne

Absolutely delicious with a few additions. I put sliced onions on top of the chicken and a clove of minced garlic in the sauce. An hour before serving add a cup of frozen peas.

Pistachio Bread

Excellent. I added whole pistachio nuts to the batter and topped the bread with finely chopped pistachios with the cinnamon sugar. This will be a big seller at our Church's Bake Sale this spring!

Seafood Stuffed Mushrooms

Fabulous! I took these to a Christmas party and all but one person asked for the recipe and he didn't like raw mushrooms. The cheese mixture is good as cracker spread too!

Best Potatoes You'll Ever Taste

DELICIOUS!I was hesitant to try this recipe because the the less than positive review. However, I used an aluminum pie plate sprayed with PAM and had no sticking problem whatsoever. The topping is even better when grated parmesan cheese is added to the mix. Made this for company last night and received rave reviews.

Zucchini Pineapple Bread I

This is a delicious, moist bread that was a big hit in my house even with my husband who hates zucchini and doesn't particularly like quick breads. A good use of the abundant zucchini crop.

Polish Reuben Casserole

Very good! A sprinkle of caraway seeds on top of the sauerkraut adds a nice touch. Next time I make this I will use crushed rye crackers for the topping instead of bread crumbs.

Different Chicken Divan

I needed something quick and simple for two unexpected dinner guests and pulled this recipe up. It was absolutely delicious and my guests thought I'd worked all day! I only used a sprinkle of curry powder however as my family is not too fond of it. The cayenne pepper really made the sauce flavorful.

Jacob's Coat Casserole

My husband thought this was OK. I thought it lacked flavor. I'm not a canned vegetable fan so I judged the veggies to be a bit mushy. There are other "shepherd's pie" recipes that are much tastier. Wouldn't make again.

Evil Cookies

I made these for my daughter to take along to college with her to share with her roommates. Everyone loved them. I used pecans instead of walnuts and also added a cup of shredded coconut. It's a keeper!
