Peanut Butter Cup Cookies

I tried out a bunch of new recipes over the holidays and this was by far my favourite. I didn't have a mini muffin pan but I baked them on parchment lined cookie sheets and they worked fine. A few of them did crack a little when I put the peanut butter cups in but that just meant I had to eat those ones as I couldn't give them as gifts! Delicious!

Delicious Black Bean Burritos

I've made these a couple of times now and they are really yummy but the first time I made them, I felt they could use a little more kick. I made a few changes, mostly just personal preference. I used a whole bell pepper, added a cubanelle, a whole jalapeno and just a bit of sriracha hot sauce. I omitted the onions, the cilantro and the salt. I also used less cream cheese (2-3 tbsp) and added a bit of tex mex blend shredded cheese into the tortillas.

No Bake Granola Bars

These were delicious and so easy! You can use it as a great base and add whatever you want to it. I left out cranberries but I added cashews, coconut, raisins and dried blueberries. I melted the peanut butter and honey together in the microwave for about a minute and then added them to the dry ingredients to make it a little easier to mix, then added the chocolate chips at the end so they didn't completely melt when I mixed in the peanut butter and honey. I cut them into 16 and they were still very large, I'll probably cut them into 20 next time. I took some with me on a canoeing trip this weekend and they went over really well. Definitely helped me make a good first impression on the new boyfriend's friends :) I'll definitely be making another batch this week.

Brownie Chocolate Chip Cheesecake

This was my first baked cheesecake and it was delicious. Thanks to other reviewers for suggesting a pan of water in the oven with it and for coating the chocolate chips in flour to keep them from sinking. I added peanut butter to the brownie mix (didn't really measure but probably about 4 tbsp and used less oil since the peanut butter has plenty of oil in it) and I also made a glaze to drizzle over top by melting about 1/4 cup of chocolate chips with a few tbsp of peanut butter in the microwave. It was so good but very rich so you only need a very small slice.

Sweet Potato, Carrot, Apple, and Red Lentil Soup

This is my new favourite soup. So tasty and filling. I was making it for the first time so I didn't change anything except I left the skins on since it was being pureed anyway and also left out the salt because I pretty much always leave out the salt. It was fantastic as is and I will definitely be making this again. Probably many times.

Creamy Rice Pudding

I'd never made rice pudding before but I had a craving so I found a recipe. It was delicious! I used basmati rice, because it was what I had, and tempered the egg as advised by other reviewers. I also added cinnamon and nutmeg and reduced the sugar a little. Yum!

Peanut Butter Bars I

These were tasty, although if I were to make them again, I would use more peanut butter and less butter as I found the base tasted very strongly of butter. I also found the chocolate part did not adhere well to the base and they kept splitting apart when I was transferring them from the pan.

Easy Lemon Cookies

The dough was more like a batter, making it hard to form into balls and roll in the sugar. I put it in the freezer a while and it helped some but it was still kind of messy. Overall, they were pretty good but nothing special.

Sweet and Nutty Moroccan Couscous

So tasty!! I made this to serve with the Israeli Moroccan couscous recipe (also from this site) instead of serving that one over plain couscous and I'm pretty sure I have a new favourite meal. I followed the recipe exactly and thought it was perfect. I'm seeing a lot of reviews saying you need to increase the broth a lot, and I guess you might want to if you're planning to eat this on its own, but as a side to a saucy stew-type dish, it's perfect. I absolutely loved it on its own as well, actually. I made this first and I definitely did some snacking on it while preparing the other dish. Thanks so much!

Israeli Moroccan Couscous

This is one of my new favourite recipes. It's a fairly easy recipe but it is time consuming so it's a weekend dinner for sure. It is absolutely delicious and filling as well. I left out turnips (I didn't have any and I'm not a big fan anyway). I also changed the spices a little, after reading some of the other reviews. I used cumin instead of cinnamon and left out the saffron and ended up increasing the amounts a little (not sure by how much, started with recipe amount and increased to taste). Instead of plain couscous, I served it over the sweet and nutty Moroccan couscous (which I also got from this site) and the whole meal was fantastic! Thanks :)
