No Bake Granola Bars
These were delicious and so easy! You can use it as a great base and add whatever you want to it. I left out cranberries but I added cashews, coconut, raisins and dried blueberries. I melted the peanut butter and honey together in the microwave for about a minute and then added them to the dry ingredients to make it a little easier to mix, then added the chocolate chips at the end so they didn't completely melt when I mixed in the peanut butter and honey. I cut them into 16 and they were still very large, I'll probably cut them into 20 next time. I took some with me on a canoeing trip this weekend and they went over really well. Definitely helped me make a good first impression on the new boyfriend's friends :) I'll definitely be making another batch this week.

Brownie Chocolate Chip Cheesecake
This was my first baked cheesecake and it was delicious. Thanks to other reviewers for suggesting a pan of water in the oven with it and for coating the chocolate chips in flour to keep them from sinking. I added peanut butter to the brownie mix (didn't really measure but probably about 4 tbsp and used less oil since the peanut butter has plenty of oil in it) and I also made a glaze to drizzle over top by melting about 1/4 cup of chocolate chips with a few tbsp of peanut butter in the microwave. It was so good but very rich so you only need a very small slice.

Sweet Potato, Carrot, Apple, and Red Lentil Soup
This is my new favourite soup. So tasty and filling. I was making it for the first time so I didn't change anything except I left the skins on since it was being pureed anyway and also left out the salt because I pretty much always leave out the salt. It was fantastic as is and I will definitely be making this again. Probably many times.
