This was for my mom's b-day, since it was just the two of us I did a small batch. She loved them! The icing in this is a basic buttercream (icing sugar, butter, milk, vanilla) easily could be vegan by replacing butter with margarine and milk with soymilk/almond milk. I sprinkled the tops with basic non pariels and gave each a jelly pumpkin candy for garnish. Pretty AND yummy! Also to prevent sticking to the papers, I sprayed the papers with pam before pouring in the batter and they did not stick at all which was grand!
