Baked Honey Mustard Chicken

I wouldn't make it again. Chicken was nice and moist but flavors all wrong (and I love honey mustard). The sauce tasted great before baking (I used dijon mustard and half the paprika) but took on a strange flavor in the end. I'm thinking the sauce would taste great just heated and poured over the already cooked chicken. Maybe I'll give that a try before I completely abandon this recipe.

Banana Muffins II

These muffins are really easy and make a nice moist muffin. I made the with my two year old and she had a blast. We made them exactly according to recipe. Next time I'll add cinnamon/nutmeg/vanilla.

Pumpkin Chocolate Chip Muffins

These were quite bland for my family's tastes-but we tend to like quite a bit of spice. We didn't care for the chocolate/pumpkin flavor combination either (but again- that's just us). Next time I'd use brown sugar instead of white, use walnuts instead of chocolate chips, double the spices and maybe add in some cardamom or ginger...but then I guess they'd have to be called, "Spiced Pumpkin Nut Muffins"-not "Pumpkin Chocolate Chip Muffins." :)

Beth's Spicy Oatmeal Raisin Cookies

These are great! I used 1 cup of butter (didn't have shortening) and added 1tsp of cardamom powder (just because my family loves cardamom) and all I can say is YUM! These reminded me of the oatmeal cookies that are used to make the oatmeal cream pies I loved as a child.

French Baguettes

Fabulous! As others said-there's no need for a bread machine here. I used my stand mixer according to instructions and made two baguettes. I didn't do the egg wash-just to see if they'd turn out crunchy on the outside and they did! Golden brown and crispy on the outside and soft and warm on the inside-YUM. Next time I'll try the egg-white-only wash so that I get the nice shiny crust.

Shish Tawook Grilled Chicken

This chicken was really good! I only marinated for about two hours (that was all the time I had), skipped the tomato paste and allspice because I didn't have any. I sauteed the chicken in a pan and omitted the onion and green pepper because I wasn't making kebabs. This went well with hummus, lentil soup, pita bread, and fattoush.

This worked out very well-I followed the recipe exactly but didn't use a wire rack-I just used the oven rack. 4 minutes was plenty of time in my oven. Best pita bread recipe I've come across so far!

Best Big, Fat, Chewy Chocolate Chip Cookie

These are really great cookies! I used 3/4 tsp of salt because some reviews claimed they were too sweet. I also refrigerated the dough for an hour before baking. Other than that I stuck to the recipe. This will definitely be my go-to chocolate chip cookie recipe from now on. Update: I make these often and have decided that 1tbsp vanilla is too much. I usually use between 1 and 2 tsp. and I use 1 cup chocolate chips and 1 cup chopped walnuts-YUM!

To Die For Blueberry Muffins

These taste wonderful! I followed other suggestions and used buttermilk instead of milk and brown sugar for the topping instead of white. I agree that the topping can be halved. I made 12 small muffins and was generous with the topping and still had a bunch left over. I used a food processor to make the topping and it worked perfectly. Be sure not to over mix the batter (so the muffins come out nice and soft). I baked these at 400 for 18 minutes. Very good!
