Eggnog Pound Cake

This was one of 5 recipes I made for our family's annual Christmas dessert party. It got rave reviews and was picked as the one to take to the party over the others. I also did not use the custard but made a glaze with 2 C powdered sugar, 2 tbsp butter, 1 tsp vanilla, 3 tbsp eggnog (plus more to get desired consistency), and 1 tbsp butterscotch schnapps.

Quick and Easy Chicken

I was looking for a cheap dish to make and found this. Doubled the sauce but kept the sugar amount the same. If made next time, will decrease sugar or omit.

Light Pesto

I made the recipe as is at first, it was nice and had a little zing to it from the lemon. I made a second batch with olive oil and mixed it together. I like it best when mixed but can/will use just lemon juice in the future. It's a nice, small change to regular pesto.

Quick Chicken with Asparagus and Provolone

If we could rate in halves I'd rate it a 4 1/2. It was our first time eating asparagus so we have to get used to it. I think that was the only thing keeping it from being rated a 5. I did add some sour cream to the sauce just to thicken it up a little. I loved the layer of bread crumbs! Next time I make this I think I'm going to try using green beans instead because it has a little less flavor than asparagus. I was also really suprised at how quick and easy it was. All in all, great recipe.

Zucchini Brownies

Made exactly as directed. Although it did taste wonderful, I got a cake like result. I assume it is from the baking soda and plan to reduce/omit it next time... or just call it Chocolate Zucchini Cake. :)

Chocolate Chip Banana Muffins

These were great. I've made numerous batches of these. Instead of yogurt, I've subbed sour cream and even mayonnaise. The sour cream and mayo mixture was amazing. Although the other ways were good too.

Creamy Swiss Chicken

This was good and so easy to put together. Although next time I would definitely put less wine. A lot of the flavor seemed to come from the croutons. So you might want to put some seasonings in the sauce/chicken. I also didn't have mustard seed so just substituted dijon. Think I might try it with Panko next time.

Dry Ranch Style Seasoning for Dip or Dressing

This is great and inexpensive. Mixed up a larger batch for future uses. Will never buy the store bought expensive mix again! I did do some minor changes - added dill, less peper, less salt (used kosher). Mixed in some with a little plain yogurt for a sandwich spread. Yum!

Amaretto

Although I've never tasted store bought Amaretto this was a real hit at a college house party! I kept getting rave reviews on it and they were quite surprised that I made it. =) I don't care much for almond flavors but this was absolutely delicious mixed with Sprite. I also used this to make Tiramisu inspired cupcakes and they came it great and look forward to baking with it more.

Carnation® Mashed Potatoes

This is a really good basic/starter recipe. You can add so much and it will still taste great. I've tried with Chicken Broth as a substitute for the Evaporated milk and although it is still good, it's not as creamy. DH loves Parsley and extra butter in it. It's so simple to make, definitely worth a try.

Corn Dog Muffins

Quick and easy to make. :) Perfect to make for the kiddies. I just chopped up a package of hot dogs small and added it to the batter. Mixed everything together and that was it. Made 28.

Ranch Burgers

This was a great hit at our weekly bbq!! It stayed juicy even though my husband tends to overcook meat. I left out the onion and sauteed it instead. We had it with avodaco, lettuce, tomato, sauteed onion, sauteed mushroom with cheddar or swiss cheese. I will absolutely make this again!

Chicken Zucchini Casserole

Hubby just asked if we could add this recipe to our favorites folder. My kids didn't care for it but what the hubster wants, the hubster gets. I added mushrooms and cheese, omitted carrot, cut down butter to 1/2 C and added 1/4 C water. I also only had frozen chicken so I just diced them up small and threw it all together and into the oven.

Grandma VanDoren's White Bread

This was so easy. Made it in my stand mixer and used 3 cups whole wheat and the rest AP. Used one loaf as garlic bread tonight. Don't think I'll be buying store bread again. Update: Made another batch of these and used one portion for pizza. It's so simple and easy!
