California Sherry Chicken

Reviewed: Jan. 3, 2006
This was extremely salty. Majority of the flavor came from the salt and pepper, which DH did not like at all. However, the chicken came out so tender. My picky 2 yo really liked it. I won't be making this recipe again.

Irish Cream Bundt Cake

Reviewed: Jan. 3, 2006
This was delicious. I made this for a Christmas dessert party and it won the most overall votes for the night. :) It was gone in 3 hours! It was very moist and extremely easy.

Chocolate Eclair Dessert

Reviewed: Dec. 4, 2005
Easy, super easy (which is why it's rated a 4 instead of 3)! Good for when you need to whip up something in a hurry but doesn't leave guests 'wowing'.

Cola Pot Roast II

Reviewed: Dec. 4, 2005
DH only wants this roast from now on. He's already asking me to make it again. Only thing I did different was leave out celery as a personal preference and rubbed more garlic into the meat. Will definitely add more vegetables and use the entire package of gravy mix. I suggest rubbing the meat with some spices as the meat itself was a bit bland, though the sauce was superb!

Eggplant Parmesan II

Reviewed: Nov. 30, 2005
This is now a regular in my household. My 2yo eats it up (of course he thinks the eggplant is sasuage) and DH who hates the idea of no meat has seconds. I like to add a can or two of tomato sauce to make it more 'saucey' for pasta. I don't like to peel eggplant so I find baking then frying to be the best method to prepare it.

Carnation® Mashed Potatoes

Reviewed: Nov. 30, 2005
This is a really good basic/starter recipe. You can add so much and it will still taste great. I've tried with Chicken Broth as a substitute for the Evaporated milk and although it is still good, it's not as creamy. DH loves Parsley and extra butter in it. It's so simple to make, definitely worth a try.

Double Tomato Bruschetta

Reviewed: Oct. 6, 2005
This was amazing! I have made it several times and it's been a big hit. I prefer cheese slices instead of shredded though and add more garlic.

Chicken Parmigiana

Reviewed: Mar. 17, 2005
This was good, better than some of the restaurants. I doubled the recipe and used 26.5oz of spaghetti sauce because my family loves their sauce. I also seasoned the bread crumbs with oregano, basil, pepper, salt, and garlic powder. I didn't have any problems with the bread crumbs sticking to the chicken like others had but will definetly fry the chicken first for more flavor. I used Hunts spaghetti sauce and it would be so much better with a good quality spaghetti sauce. I also added garlic to the spaghetti sauce and used provolone instead of mozzarella. I put the provolone on the chicken then the layer of spaghetti sauce and then parmesan cheese. Will definetly make this again with garlic or french bread to dip. Yum!

Southern Mushroom Soup

Reviewed: Mar. 9, 2005
********** 10 STARS! All the ingredients blend together extremely well. The only thing I did differently was using Half and Half instead of heavy cream like another poster. I swear my husband finished his bowl in 1 minute. It's simple to make with a flavor that makes it seem like you've been making it all day. I think next time we'll use more mushrooms, just because we love them and try french bread like the other poster. Absolutely yummy! Recommend everyone thinking about making this recipe to do it! You won't be disappointed. One more thing, this was the first time seeing a dish like this (with the bread I mean). Already planning to take it to the in-laws.

Italian Sausage and Zucchini

Reviewed: Feb. 25, 2005
Not for my family. I substituted the yellow squash for mushrooms and added a bunch of spices. The sauce was a bit bland with out it. Didn't care for the italian sasuage, maybe ground beef would have been better. Don't think I will be making this again.

California Chicken Spaghetti

Reviewed: Feb. 24, 2005
This was great though I don't think I used the right Cajun Seasoning. It tasted similar to another recipe I found on here (Pasta Pomodoro). I added extra things: garlic powder, oregano, sugar, crushed red pepper, chicken bouillon, and used chicken broth to dilute the sauce. I also used a can of crushed tomato with some fresh ones. Loved the feta cheese, we used a bit more than called for. My one year old ate this up so I'll be making this time and time again! =)

Chicken In Basil Cream

Reviewed: Feb. 23, 2005
This was quick and good. The only thing I did differently is I left out the Pimento Peppers, seasoned the bread crumbs and used dried Basil. Other than that I followed the recipe to the T. My husband loved the texture. I'm going to have to try it with fresh Basil. I'm sure it will be a 5 with that.

Pasta Pomodoro

Reviewed: Feb. 23, 2005
This was great but I think would be even better with chicken. I used 12oz of angel hair instead of 16oz which the recipe calls for and it still made tons. Next time I won't put the pasta in the pan because it soaked up all of the sauce and my family loves sauce.

World's Best Potato Soup

Reviewed: Feb. 12, 2005
Loved it! I cut the recipe in half and used 10.75 oz of evaporated milk instead of half and half. I left out the celery and added mushroom. I used another review that stated to saute onion and mushroom with spices and white wine. Excellent. I didn't have much cheddar so I mixed it with mozzarella. It needed much more cheddar. I also didn't have bacon so I put in the remaining bacon bits that we had (approx 1 tablespoon). Even though I cute the recipe in half it could feed us for 2 - 3 days.

The only thing that we could taste was the lemon juice. Husband doesn't want to eat this again. It did tenderize the mean really well.

Wine Sauce Chicken

This was good. But I think the next time I'll sub sour cream for mayonaise. My husband didn't really care for the mayo flavor much.

Chicken Monterey

Reviewed: Feb. 10, 2005
My husband liked it more than I did. I thought it was way too salty even though I cut the celery salt in half. I don't think I'll be making this again.

Pan-Fried Steak with Marsala Sauce

Reviewed: Jan. 28, 2005
My husband and his co-workers loved it. It came out nice and juicy and it was quick and easy to make. Personally, I'd rate it a 4. I sprinkled it with garlic salt instead of regular salt and added mushrooms. I did simmer the sauce for a lot longer just to make sure the alcohol flavor wasn't too strong.

Tuna Noodle Casserole II

Reviewed: Jan. 27, 2005
This came out very dry and it really didn't have much flavor to it. I added more cheese and more evaporated milk but that didn't make a difference at all. I don't think I'll be making this again.

This was good but it wasn't as flavorful as we thought it would be. Needs spices like others have suggested.
