Creamy Swiss Chicken

This was good and so easy to put together. Although next time I would definitely put less wine. A lot of the flavor seemed to come from the croutons. So you might want to put some seasonings in the sauce/chicken. I also didn't have mustard seed so just substituted dijon. Think I might try it with Panko next time.

Too Much Chocolate Cake

Homemade Flour Tortillas

Oh how I would love to make these more often. But rolling every single one out was quite a task. This, however, does not affect my 4 star rating (4.5 if I could) as a tortilla press would easily solve this problem. I used shortening even though it says not to but it worked just fine.

Lemon Fluff Cake

Used the cake flour substitute (1 3/4 C AP and 1/4 C Cornstarch) and made into cupcakes. Turned out great although you could still taste flour. Perhaps just a little more extract could fix that. It wasn't a deal breaker for me. Made lemon curd that used the remaining 3 egg yolks (juice of 2 lemons, 3 egg yolks, ~8 tbsp sugar, 4 tbsp butter) and filled the cupcake with a little of it. Also topped it off with the Lemon Icing from this site. Thought it might be lemon overload but I guess this is where the subtle lemon flavor of the cake was a good thing.

Sugar Cookie Icing

This was great! Used this to decorate Gingerbread Men this year and pass out. It was so easy to make. I just dump all the ingredients together and whisk, my fault for not not reading the directions. But it worked just fine. Added more milk to get it a little thinner - a little bit at a time. Then put some gel food coloring in a ziploc bag and added some of the icing. Snipped the tip and my 6yo was ready to decorate. Dried up nicely, stayed pretty true to color, and had a nice shine to it. Will definitely be using this recipe again and again.

Amaretto

Although I've never tasted store bought Amaretto this was a real hit at a college house party! I kept getting rave reviews on it and they were quite surprised that I made it. =) I don't care much for almond flavors but this was absolutely delicious mixed with Sprite. I also used this to make Tiramisu inspired cupcakes and they came it great and look forward to baking with it more.

Skillet Pork Chops with Potatoes and Onion

Quite good and easy to make. I used 2 tsp of chicken broth and omitted all other salt. And added some seasonings to the flour. The pork came out nice and tender. The only thing my husband wished for was more sauce.

Chicken Florentine Casserole

Got the thumbs up from my 6 year old! Took the advice of another member and didn't bake the chicken first. I actually forgot to put the bacon on and used less mozzarella cheese but it was still good. =)

Lemon Cream Pasta with Chicken

Quick and easy. To save on dishes and time, I just sauteed the chicken with the spices in the same pot I made the sauce in. It was a great switch up from the usual pasta dishes we have here. Definitely want to try it with red peppers next.

Rice with Black Beans

Instead of using stewed tomatoes, I used a can of tomatoes with green chilies, added cumin and cayenne, used olive oil, added a little bit of chicken broth, and used already cooked leftover rice. Mixed the rice in after letting the sauce simmer for a little bit.

Pumpkin Pie Spice II

I had everything for a recipe I wanted to make except the pumpkin pie spice. I'm so glad I was able to did this recipe so I didn't have to go to the store. Definitely worth a try if you are in a pinch or if you just don't want to buy an unnecessary spice.

Mrs. Sigg's Snickerdoodles

These were good and simple to make. Used all margarine because that's all I had. Used more sugar and cinnamon and took the very helpful advice of putting it in a sandwich bag to roll the balls in. I'm not a big fan of the cream of tartar taste in it so will definitely sub lemon juice. It wasn't flat, dry, or crunchy at all. The only thing that bothered me was that I couldn't get it to crackle. 12/4/10 - Just finished making 30 dozen of these... and lived! I used butter flavored crisco and vinegar to replace the cream of tartar. Loved it this way! I also chilled the dough this time, which I think helped with the puffiness. Changed rating from 4 to 5 stars.

Wow these were rich. Upon reading reviews I cut sugar to 1/4 C and reduced the chocolate chips in the cream cheese part to 1/2 C.

Iced Pumpkin Cookies

I made this last year and my husband took it to work. He got rave reviews from it then. Recently, he got asked if I'm planning on making it again this year. I guess when people remember an item from over a year ago it has to be good. =)

Spaghetti Carbonara II

I've wanted to make Carbonara for months but was always frightened off about cooking the egg and ruining the dish. Tonight I felt brave and found a great recipe to add to the regular rotation. =) I took the advice of others of combining the egg and cheese and added it to the dish after the pasta had cooled slightly. Creamy goodness! I used Turkey Bacon because that's all we had. The only comment my husband made was that he wanted more bacon and perhaps mushrooms in it too. Other than that he really liked it. It was quick, easy, and all ingredients are readily stocked in my house... love it!

Creamy Chicken and Wild Rice Soup

Husband raved and raved about this soup. I know people don't like it when the recipe is changed up so much but I find the reviews helpful. Anyways, I used leftover chicken from a roast I made earlier and a 8.8oz package of Uncle Ben's 90 second rice (that's all I could find). I cut the flour to 1/4 cup but would probably use more next time. I also used 1 C of Heavy Cream and 1 C of Skim Milk (that's all I had) and omitted the salt. One last change, I sauteed an onion before the broth step, like others have suggested. My husband does not like to eat anything with bones in it so he's not a fan of my roasted chicken. BUT he said that he'd like me to roast chicken more often if only to make this soup. =) That's a definite winner in my book.

Kalua Pig in a Slow Cooker

Not quite the same as in an imu but close. Upped the liquid smoke a bit and put it on high for about 7 hours (actually forgot about while doing errands) in the morning and then put on low until dinner. Served with Chicken Long Rice and Poi.

Chocolate Chip Pumpkin Bread

Extremely quick and simple... not to mention delicious. Though I did give it a 4 rating simply because it was missing the 'wow' factor for us. But this will definitely made in our house again, and again, and again! Oh, forgot to mention that I made these into muffins and it took about 20 - 24 minutes.

Eggnog Pound Cake

This was one of 5 recipes I made for our family's annual Christmas dessert party. It got rave reviews and was picked as the one to take to the party over the others. I also did not use the custard but made a glaze with 2 C powdered sugar, 2 tbsp butter, 1 tsp vanilla, 3 tbsp eggnog (plus more to get desired consistency), and 1 tbsp butterscotch schnapps.
