Slow Cooker Beef Stew I

Quick and Easy Chicken

I was looking for a cheap dish to make and found this. Doubled the sauce but kept the sugar amount the same. If made next time, will decrease sugar or omit.

Baked Pesto Chicken

This was a great last minute throw together meal. I used homemade pesto (a lot more than 1/2 C because I wanted extra sauce for the noodles) and used sundried tomatoes, added a little parmesan. I also poked the chicken since I didn't have time to marinate. Will definitely be making this again.

Chicken Zucchini Casserole

Hubby just asked if we could add this recipe to our favorites folder. My kids didn't care for it but what the hubster wants, the hubster gets. I added mushrooms and cheese, omitted carrot, cut down butter to 1/2 C and added 1/4 C water. I also only had frozen chicken so I just diced them up small and threw it all together and into the oven.

Zucchini Brownies

Made exactly as directed. Although it did taste wonderful, I got a cake like result. I assume it is from the baking soda and plan to reduce/omit it next time... or just call it Chocolate Zucchini Cake. :)

Light Pesto

I made the recipe as is at first, it was nice and had a little zing to it from the lemon. I made a second batch with olive oil and mixed it together. I like it best when mixed but can/will use just lemon juice in the future. It's a nice, small change to regular pesto.

Grandma VanDoren's White Bread

This was so easy. Made it in my stand mixer and used 3 cups whole wheat and the rest AP. Used one loaf as garlic bread tonight. Don't think I'll be buying store bread again. Update: Made another batch of these and used one portion for pizza. It's so simple and easy!

Dry Ranch Style Seasoning for Dip or Dressing

This is great and inexpensive. Mixed up a larger batch for future uses. Will never buy the store bought expensive mix again! I did do some minor changes - added dill, less peper, less salt (used kosher). Mixed in some with a little plain yogurt for a sandwich spread. Yum!

Vegetarian Chickpea Sandwich Filling

A tad on the dry side but nothing a little more mayo can't fix. Hubster and children don't care for it. That just means more for me. :) Left out the celery as a personal preference but think I will mix in some chopped cucumber for a little crunch. Makes a nice panini.

Chocolate Chip Banana Muffins

These were great. I've made numerous batches of these. Instead of yogurt, I've subbed sour cream and even mayonnaise. The sour cream and mayo mixture was amazing. Although the other ways were good too.

Corn Dog Muffins

Quick and easy to make. :) Perfect to make for the kiddies. I just chopped up a package of hot dogs small and added it to the batter. Mixed everything together and that was it. Made 28.

Best Tuna Casserole

This is exactly what I was craving for. I tried another tuna casserole on this site and it was a dry disaster. This was great with some minor modifications. Added a can of milk, left out the onion as a personal preference, added garlic powder and parsley, used penne because that's all I had and cooked in an 8x8 instead of 9x13.. Also, instead of using potato chips, I used bread crumbs and pour a little melted butter on it.

Gone in an hour! It also got a "melted in my mouth" comment. =) I let the dough chill overnight and had to let it sit out a bit because it was too hard to scoop.
