Creamy Rice Pudding

This is an excellent basic recipe. I made it the first time with regular long grain rice. The second time I used arborio. The arborio cooked up faster, but I had to add more milk to get the texture I like. Added more raisins too, but that is because I like raisins. I highly recommend this one.

Mom's Best Peanut Brittle

I made two batches of this brittle this afternoon. I put peanuts in the first one and broken cashews in the second one. Ordinary nuts from the Bulk Barn - salted. I used too many peanuts (maybe 2 cups) so cut down to 1 cup for the cashews - not enough nuts. Probably 1-1/2 cups of nuts would be best. I lined the cookie sheet with aluminium foil and buttered it. If you leave it until completely cold, the foil will peel off. Otherwise, you need to pick off some bits of foil that stick. All in all, two very good but different results. I like the taste of the cashew brittle best I think. Incidentally, used my candy thermometer and boiled to Hard stage - about 250 to 260 degrees F. I'll make this again next Christmas! Certainly is economical!

Zucchini Nut Cookies

I made these to-day and doubled the recipe because I had frozen my grated zuccini in 2 cup packages *g*. The cookies were quite good. I found them to be rather lacking in sugar, but that is probably me and my idea of cookies. Next time I will add extra sugar. I added a cup of chopped dates because I had them here...... I will make these again, but add extra sugar and probably step up the spices by 1/4 more.

Tangy Slow Cooker Pork Roast

This was absolutely wonderful! I layered sliced onions on the bottom, then the pork on top. Doubled the sauce recipe, but cut back to 1 tsp on the sugar as suggested. Thought it was really salty when cooking, but it was fine when done. The pork was moist but carvable and tasted great. Used salsa instead of ketchup. Used cider vinegar. Have half the roast left and will cube it and use it mixed in to macaroni and cheese for another big meal. I can heartily recommend this! You can adjust the sauce to your liking. I thickened it with cornstarch after removing the roast and the onions. I am not a 'barbecue' fan, but loved this.

Dave's Big Raisin Cookies

These are great cookies, especially right out of the oven! I baked some half an hour ago and there are only two left. I mixed up the whole batch, formed them into four rolls, and keep them in the refrigerator for quick treats. One thing I did wrong is to mix the raisins in with the dough in the Kitchen Aid mixer. After boiling the raisins, they broke up instead of staying whole. Next time I will mix them in by hand. I think I will add some chopped dates next time too, and maybe increase the nutmeg a bit, and add some nuts. They would make Hermits that way. But they are GREAT cookies!!!!

Mincemeat Quick Bread

If you like mincemeat, you will love this quick bread. I had to change the recipe a bit because I didn't have any vegetable oil, so I added 1/4 cup shortening to the dry ingredients and cut it in - like making pastry - before adding the liquid. It worked fine! I will make this again!

Crumb Apple Pie

Definitely wonderful! The best apple pie I have ever made, and I have been cooking for a lot of years. I did cut down on the cinnamon, and I ended up with one very deep dish pie and six largish tarts. They liked the pie the best because it had more apples. I used MacIntosh which went a bit soft, but tasted great. In future I will use this recipe to make all my apple pies and tarts.
