Blueberry Zucchini Bread
Second time I've made this, and it came out perfect, even with doubling the recipe! I substituted applesauce for the oil, and also used 1 1/2 cups brown sugar and 3 cups white, instead of 4 1/2 cups white sugar - the brown sugar added a special flavor that made this just perfect. Very yummy!

Easy Slow Cooker Lasagna
Delicious, relatively easy, and my 2 year old is eating chard and zucchini, what more can I ask for? I used a jar of sauce instead of the tomato mixture called for in the recipe, and added 1 lb sauteed beef to it. I also chopped the chard and added grated zucchini to it. I also added 1/2 jar of sauce on the top, before the last layer of mozarella. I cooked it for 1 hour on high, then 2 hours on low. Turned out perfect, not too watery or dry. Only change I would make next time is to add more cheese, both ricotta and mozarella, because the last layer was a little skimpy.

Slow-Cooker Pepper Steak
I made this recipe exactly as it calls and it turned out great. I served it over long grain rice. Especially pleased with how tender the steak turned out, and not at all dry, a problem I've had with other slow-cooker recipes. Best part was watching my 2 year old devour not just 1 but 2 servings. This is a keeper for my busy family.
