Greek Honey Cake

Easy, tasty, and not too sweet, this cake was a hit at a work celebration. I used only half of the honey syrup, as many reviewers recommended, and I think it had the right amount of sweetness. I'm not a big fan of honey, so I gave this a four out of five, but it was a hit with co-workers. You can use your lemon to make a zest garnish, as well.

Zucchini Pineapple Bread I

Very tasty, moist, and mildly sweet. The spices add a nice aroma and filled the whole house during baking. I used light olive oil instead of vegetable oil for better health. Don't forget to use a toothpick to test for doneness--if it comes out clean, it's ready.

Scalloped Cheese Potatoes

Very nice! A simple, tasty, crowd-pleaser. I used a russet variety, cooked in 70 minutes, and topped with shredded parmesan that I broiled for a couple minutes to a golden brown.

Thyme Green Beans with Almonds

These beans were great at a holiday dinner. I piled the beans on top of a steamer in a large saucepan, nearly reaching the lid. You may think they look unworkable that way, but they should get cooked evenly with good steam. Be sure to test the beans a couple times while steaming to make sure they're not cooked too much; you want them still crisp before you put them in the pan for the last 5 minutes (10 minutes of steaming worked well). 1 tsp of dried thyme is a good substitute for fresh.

Cheddar Chipotle Bread on a Pizza Stone

This bread is delicious! I made one loaf for home and one loaf for work and they were a big hit. The dough was tough to knead by hand with the various cheeses, but the labor was worth it. I removed the chipotle seeds to decrease the fire. I baked two loaves together on a 12.5"-diameter pizza stone; they barely fit!
