Spinach Cheese Pie

Reviewed: Jan. 18, 2011
This was so flavorful! I sauteed onions, garlic, & mushrooms to add to it, added salt & pepper and used cottage cheese in place of ricotta cheese. I also added 1/2-3/4 cup of mozzarella in it and again on top in last five minutes of baking.

Asian Tuna Patties

Reviewed: Jan. 10, 2010
They had great flavor, were very easy to fix and will become a regular in our house. I changed a few things due to what I had on hand....subbed oatmeal for breadcrumbs and canola oil for sesame oil and omitted onions. They were very soft and difficult to handle before cooking but after cooking firmed up and stayed together. Thanks for a yummy, healthy recipe!

Overnight Caramel French Toast

Reviewed: Oct. 5, 2009
My family really enjoyed this. (In fact dh took leftovers to work for supper.) It was a little "toasty" on top and soggy on the bottom after baking. I inverted it to serve so the "carmel" was on top and dripped down to the toasty layer. Between that and cutting it up to eat, it wasn't too mushy. It's very easy to make and the ingredients are things I had on hand. I'll definitely make it again! (may add fruit next time too!)

Julia's Easy Slow Cooker Chicken

Reviewed: Oct. 5, 2008
The chicken was SO MOIST! It was flavorful and made a great gravy. I used water instead of milk and started with frozen chicken breasts. I cooked on high for about 4.5 hours.

Twice Baked Potatoes II

Reviewed: Dec. 28, 2007
Everyone enjoyed this but I thought it could use more flavor. It was a lot of work and next time I think I'll just make flavored mashed potatoes since that's basically what it is anyway.

Slow Cooker Tender and Yummy Round Steak

Reviewed: Mar. 17, 2007
Quick, easy & tasty! I didn't cut the meat or use onions. I also used a partial bag of baby carrots. It made a great, thick gravy, and if the meat were cut, I could see how it would be like a beef stew. For us though it was more like a thin roast with veggies and gravy. Definitely a keeper!

Best Beef Stroganoff

Reviewed: Mar. 17, 2007
This was very yummy! I used a boullion cube & water in place of the consomme & wine. I also used 3 cloves of garlic, & canned mushrooms. Since I was out of noodles, I sliced potatoes & boiled them and served it over the potatoes.

Broccoli Beef I

Reviewed: Mar. 13, 2007
This was very quick, easy and delicious! I dissolved a boullion cube in 8 oz water & then added 4 more oz cold water before adding flour. I also added more spices: 4 TBSP soy, 3 cloves garlic, 1/2 tsp ground ginger. I also used the brown sugar as suggested by another reviewer.

One Dish Chicken Bake

Reviewed: Feb. 9, 2007
My family raved about this! My 14 yo son who doesn't normally like chicken, loved it & my husband said it was "definitely a keeper, at least once a month!" I did season the chicken with poultry seasoning, curry & salt & pepper but otherwise followed the recipe.

Southern Peach Cobbler

Reviewed: Aug. 1, 2005
This was great! We adjusted the recipe to serve 12 and cooked it in a 9x13 for 35 minutes. Then covered it with foil to prevent overbrowning and baked another 10 minutes. We also used fresh peaches ~6 cups (3 lbs) tossed with 1/4 cup or so of sugar. Bake in 9 x 13

Sam's Famous Carrot Cake

Reviewed: May 22, 2005
This is GREAT! I wasn't a huge carrot cake fan until I found this recipe. My hubby loves carrot cake and claims this as the best he's ever had! I baked it in three 8" pans for about 30 minutes. I frosted it with Whipped Cream Cream Cheese Frosting. We thought it was especially good with all the layers & the cream cheese frosting.

Whipped Cream Cream Cheese Frosting

Reviewed: May 22, 2005
My husband loves this since he doesn't like really sweet frosting. The combination of whipped cream and cream cheese makes a light, fluffy frosting. The only reason I didn't rate it a "5" was because I like really sweet frostings. If I were making it for me, I'd add a little more sugar. I chilled my bowl & beaters and had no problem getting thick frosting. For those who think this is too runny, be patient and really whip the cream until it's really stiff. Also, be careful not to stir too much when mixing with the cream cheese mixture. I increased all the ingredients to use the entire 2 cups of whipping cream and had enough to frost an 8" three layer cake and still have almost 2 cups of frosting left! It will be good on bagels or cinnamon rolls.
