Apple Raisin French Toast Strata

I was very dissapointed. I had high hopes for this Strata. I love the idea that you can prepare this beforehand. But the taste was bland (even though I added cinnamon to coat the apples). The texture was very mushy. THe raisins ended up tasting odd and the cream cheese didn't do anything. Too bad...it really sounded good.

Raisin Bran Chewies Cookies

LOVED IT! I have already made this twice within 24 hours!!! I followed the recipe as indicated, except I specans instead of walnuts. The cookies turned out great. I baked them for about 11 minutes so that they would be soft. The texture really surprised me. The cookie was nice and chewie but the cereal gave it some crunch. Kind of like when you have a soft cookie with some crispy edges, but all mixed together (I don't know if that made sense at all). Bravo!

Chocolate Cavity Maker Cake

Salmon and Potato Pie

I love salmon pie! BUt I didn't want the extra fat from the crust. So I added some bread crumbs and some chopped parsley and I baked it as a loaf. I left out the thyme and I used fresh salmon instead of the can. Served it with a bechamel sauce and steamed broccoli. It was FANTASTIC!! I didn't even miss the crust and I liked it even better since it wasn't so heavy.

Indian Tandoori Chicken

I woul prefer not to give this dish any star value because I was unable to follow the recipe as stated. As I made it I didn't like it, but I will try it again. Here's what went wrong: 1- Absolutely use the food colouring...unless you want to eat pink chicken. 2- Do use a grill. It was waaaay too cold to go outside and grill, so I did cooked the chicken with marinade in a pan (like a stir-fry). I am positive the grilled flavour is far superior. 3-I could not find garam masala. I'm sure I have seen it before, but just when i needed it I couldn't find it. So instead I used a tandoori paste along with all the other ingredients. Wasn't that great... I will definetly try this again.

White Bean, Spinach, and Barley Stew

I wasn't too crazy about this dish. It certainly wasn't a stew. It was basically a meal. I did cook the barley in some stock to give it flavour and I also cooked it longer, as per another reviewer's suggestion. It might have been better if the dish was served over the barley instead of mixed in. I served it with a nice crusty bread. Though my husband I ate it and was ok, the kids weren't crazy about it (and they usually do like beans and grains and such). I won't be making it again. It's too bad...it seemed promising...

Burrito Pie

This was excellent! I used a jar of salsa instead of taco sauce by mistake and it turned out great! I was skeptical about mixing the beans with the beef, but the consistency was great and it was very good. I also added some taco seasonings, which added some flavour. Served it with some mexican rice with green peppers and corn. Thank you for a great and different recipe!

Absolute Mexican Cornbread

I'm not too sure where I stand with this one. It was waaay too sweet. I used jalapenos instead of chili peppers. While the flavours were good, despite the sweetness, my brain did not know what to make of it. One minute I think I'm eating cake and the BAM! I hit spicy jalapeno. I do think I will try it again though. Bur next time I will use half the sugar and half the butter.

Sonny's Tater Tot Casserole

This was very good. I had never had tater tot casserole before. I compared a few recipes before setteling on this one. I liked it because it had vegetables and no heavy sour cream. I used half fat cream of mushroom soup and added ground beef to the mix. I also decided to mix it all together. It was quite good, but still heavy. Not something I would make very often, but definetly will make again. My 2 year old also loved it. (Yeay! I got her to eat spinach!)

Cashew Crusted Chicken

It was alright. It could definitly be tinkered with more. The most delicious part was the caramelized preserve mised with the cashew that stuck on the pan. That was really good, but otherwise the chicken was rather bland and the apricot totally overpowered the casheews. Perhaps if the cashews were roasted, it would enhance the flavour. I think perhaps next time I will try just sauteing small pieces of chicken and then adding the sauce and the cashews.

Pasta and White Beans Gratin

I really liked the combination of flavours in this recipe. I didn't have any fresh basil so I did use some dried. I'm sure it is 10 times better fresh. My only complaint is that the ricotta made the dish rather dry. It did not melt at all. I will make this again. However, next time I will replace the ricotta with a Bechamel sauce(white sauce) and bix the bread crumbs with some mozzarella cheese. Thanks for introducing a tasty dish that includes beans!

Slow Cooker Chicken Parisienne

Unfortunatly, I did not really like this recipe. I thought it lacked flavour and basically had the taste of a piece of chicken with a can of cream of mushroom, nothing else. I guess for someone who is used to foods with lots of spice and garlic, this was really bland in comparison.

Dirt Cake I

I give this desert 5 stars for the fun factor! My 2 year old and I had so much fun making it. And then had even more fun seeing the look on my husband's and BIL's face when they saw me serve it. They really thought it was real dirt. I have to say it looked quite convincing. I didn't have any pudding so I improvised with the cream cheese and whipped cream, I added some vanilla. Iwas afraid I didn't have enough Oreo's so I had a few vanilla cookies that I tossed in. It looked exactly like fertalizer in the soil! The taste was ok. Not the greatest desert I've eaten. But the kids love it and I am sure I will make this again just for the fun of it!

Asian Salad

I didn't care much for this salad. It was more work than I cared for. It made a lot of salad, but unfortunatly it didn't keep well for the next day. The cabbage and noodles turned out soogy the next day. The clincher was that it used a lot of oil for a salad. i won't be making again.

Rosemary Mashed Potatoes and Yams

This dish was quite good. I did make a few alterations though so that it would't be too heavy. I used about 2 tbsp butter only and a bit less cheese, then during the oven baking process, I sprinkled some bread crumbs over top. I LOVED the roasted garlic! I though the flavours blended nicely. The only reason I didn't give it 5 stars is because I think a dish should be spectacular to get. This was good...but not "make your eyes roll over in your head" good.

Vegetable Couscous

I really liked this recipe. It had a great taste and was filling enough to be a meal on it's own. I didn't use celery though as I didn't have any, I used fresh minced garlic instead of garlic salt, and added a few more dashes of tobasco sauce. It was really good! The cooking times are perfect! You musn't overcook the veggies! Keep them slightly crisp. *I have made this a few times since...last time I added some chick peas while the veggies were cooking. It was wonderful and made this into a completely balanced meal. I Highly recommend!

Watermelon Summer Salad

I havn't made this recipe exactly, but this is what we would have for dinner on a hot and muggy evening. This is a typical middle eastern thing. However, we don't serve it as a salad with dressing. Just cut up some watermelon and have some good feta cheese and some good black olives on the side. Love it!

Hot Fudge Pudding Cake III

We have had this exact same recipe for years with one difference. We bake it in the microwave for 10-12 minutes on high. I also add 1 tsp vanilla and about 1/2 cup of whatever nut I happen to have on hand. This is perfect for when you are watching a movie at night and feel like something freshly made, sweet, and fassssst!
