Cinnamon Pumpkin Waffles

We made these minus the wheat germ and pecans b/c we didn't have them on hand. They were DELICIOUS and creamy (for a waffle!). Even better the next day when we took the leftovers out of the freezer and toasted them for breakfast.

Indian-Style Rice with Cashews, Raisins and Turmeric

I made this as directed except subed Curry for the Turmeric and it was great! Creamy and delicous right out of the pan, although the next day it had dried out alot. I may try adding extra broth next time.

Slow Cooker Baked Beans

I am not a big bean person, but everyone who ate these loved them! I didn't know what a ham hock was so instead I picked up a ham bone from my local Honey Baked Ham Store and used that. It added tons of meat and flavor and I'd definitely do that again.

Seafood Enchiladas

I followed many of the reviews and doubled the sauce. I added some sauteed green onion to the filling for color. I also doubled the shrimp. Perhaps I am weird, but did not care for the crab (even though I sprang for the good stuff) and next time will make them with just shrimp!

Feta Veggie Quiche

With my changes this was 5 star. Had lots of requests for the recipe..basically used half/half in place of the milk and used 4 oz of sundried tomato feta. I also sauteed all of the veggies before putting in the crust, dumped the cheese on, and then poured the egg mixture. Instead of brocoli which I don't care for I added some squash and tomatoes from my garden. YUM!

Buttery Corn Bread

Sam's Famous Carrot Cake

This is the first time I have made a cake that actually upstages the icing. Perfect and delicious in every way! Love all of the goodies that are mixed in. I made it exactly as directed and it was wonderful.

I have made this twice following most of the other reviews (add potatoes, grill eggplant, omit butter, add eggs to sauce). It is good, but a little bit bland...even after I increased the seasonings in the meat. I think next time I will experiment with a different recipe.

Avocado Shrimp Ceviche-Estillo Sarita

The taste of this is 5 star, but I am only giving it 3 becuase something is off in the recipe...it says that your shrimp should "cook" in 5 minutes. Mine took pretty much ALL day. Luckily I started this recipe first thing in the morning. As long as you do that you should be OK! Oh, and instead of mixing the avocado in, I served the ceviche in avocado halves. YUM!

Chicken with Asparagus and Roasted Red Peppers

This recipes is super easy and delicious. The balsamic vinegar really gives it a nice flavor and keeps it from being a run of the mill healthy recipe.

Pumpkin Black Bean Soup

My husband and son loved this. I just thought it was OK. But it is still a great option for an easy, healthy, inexpensive dinner. I think that I used 2 C less broth than was called for since we like thicker soup. Otherwise, I made as directed.

Pico de Tuna

I gave four stars b/c it is so easy, healthy, and economical. I used a tub of pico from the produce section instead of making my own and just added a little garlic salt and lime juice. A great meal ready in 5 minutes!

Quinoa and Black Beans

This was a yummy, healthy, easy to make meal. I added 1 diced red pepper for color and put some shredded cheese on my kid's servings to make it more attractive to them and they did eat it! Good cold as well. Will definitely make again.

Baklava

I love baklava and this recipe won't dissapoint. I was skeptical about it being freezable, but I tried it and it came out great. Will start baking for the holidays early next year and store in the freezer!

Chocolate Yule Log

My family really enjoyed this dessert and went back for seconds. The only change I made was to spread raspbery jam over the cake before adding the mocha cream. My cake did crack alot and stuck to the towel, but it was easily covered by the frosting. Next time I will try rolling the cake up with waxed paper instead of a towel to avoid sticking.
