I made a Chick. Tort. Soup another time and it went poorly, I was apprehensive about this but time was short & the day was HECTIC and hubby WANTED soup! SO, I started this recipe at noon & it was done (at high) at 4, I just shredded the chicken breasts (I used three) up right before serving, topping with restaurant style corn chips, crushed, and mexican-style cheese. My husband smelled it, said (as always), "this better be good!" and then wolfed down two heaping bowls full! He told me that night that this was EXCELLENT soup, like he would expect from a restaurant!! Super meal, low-fat and SO good! Thank you! (Makes loads of soup, too! Get ready to freeze some & use some for left-overs for lunch, tomorrow!) My 2 yr.old loved it, 4 yr. old didn't, 7 yr.old ate all & no complaints, and 11 year old LOVED it! I did, too. I'm keeping this one!
