Curry Pumpkin Soup

Reviewed: Oct. 5, 2006
I bought a pumpin at the farmer's market for making pie & seeds, but found this recipe on a "quick meal" search & thought, "What the hey? Sounds healthy & the ratings are great." SO>>> I followed other reviewers & added about 1/4 Cup of food processed onions to the bubbling butter, then did the recipe as followed. Added about 1 cup of shredded chicken to it & used Coconut milk instead of the 1/2 & 1/2, AND I used Indian Curry which made it near impossible for my children to feed their bodies so wonderfully as my hubby & me! Made wheat rolls & topped the soup with the seeds & we were so satisfied, in & out! This is a great, warm up your insides & get your nose running soup! So good for you too! Thank you for this addition to my fave site! Now this recipe card sits in front row in my soup slot in the recipe box!!!

French Herb Bread

Reviewed: Oct. 4, 2006
Excellence! ~sheer delish! We made this in our bread machine & before that honking lot of dough got big enough to pour out onto our counter we took it out & divided it, rolled the dough on a floured surface & rolled it up, tucking in the ends. Covered wit plastic wrap on a large cookie sheet, let rise & then, baked two HUGE loaves & brought to a family Italian dinner & it was inhaled! Only a wee tad of butter needed, maybe even none! Soft, chewy, and so aromatic & beautiful. KEEP THIS IN THE RECIPE BOX!!!

Cheesy Acorn Squash

Reviewed: Sep. 15, 2006
We love squash, we grew it... we did NOT like this. I added some stuffing & bacon to it, just to make it more filling for a dinner, my husband told me to scoop out the stuffing for him & he'd eat that... Kids aren't too big on crunchy celery, onions & mushrooms... not a family pleaser for us.

Sun-dried Tomatoes I

Reviewed: Sep. 15, 2006
Make sure you don't do what I did & NOT use a non-stick pan, either that or lightly oil the pan prior to baking... took all day & WOWSA, so delish. Other than the scraping off of the pan, they turned out wonderful. So much flavor in one little strip, they pack punch & will make beautiful gifts come this Christmas! (tis' amazing how you can fit 5 huge tomatoes in one, little 6oz jar!)

Rainbow Pasta Salad I

Reviewed: Jun. 27, 2006
I don't know why but this recipe just needed sprucing up! I had to add Parmesan, carrot julliennes, parsely, muenster cheese cubed, cheddar shreds, and lots of salt to make this palatable to our famaly. it just had no zing, tasted like bland, oily noodles... maybe the dressing was to blame? I don't think so, though.

Quick Quiche

Reviewed: Jun. 24, 2006
I just made this for breakfast & we devoured it ...my husband had refused to eat it for supper the other day (he threatened to go out to eat if I made it!) so I snuck into the kitchen before he woke up & started this UNBELIEVABLY FAST, easy & so delicious quiche!!! Thank you so much for submitting this, it's absolutely easy & my early teen daughter will be whipping this up for us often!!! *NOTE* glass pie pans take 5-8 minutes longer so don't open the oven door until you've made the adjustment! Otherwise your's will fall, as mine did --but its going to still be great!

Cheddar Bay Biscuits

Reviewed: Jun. 22, 2006
I made this recipe & added 1 tsp. minced garlic to the dough becuz' my family LOVES garlic... HUGE amount of biscuits & absolutely wonderful!!! Thank you for submitting, now my bubby doesn't need to crave RL just for their biscuits (everything is just too overpriced!) and we'll save our "dough!" Hint: no need to roll out & cut, just drop by tbs. full & they come out cute as ever!!! Oh, also added 3 snipped, fresh chives to butter mixture, outstanding!

Fruit Pizza

Reviewed: Jun. 13, 2006
Made this for a fantastic-family-dessert, they deserve it! It was SO delish. We ate our peices & the kids could not wait until tomorrow when they could eat another! My husband said his was even better in his lunchbox the next day! Soooooo delicious, so recommended! This would be a fun party dessert! We're thinking of making veggie-pizza & this fruit pizza for a picnic/ potluck next time! Very impressive.

Rhubarb Torte

Reviewed: Jun. 5, 2006
This was so pretty! It tasted sublime, let me tell you! Rhubarb is NOT a family favorite & now it has become a beloved, free delish-treat in our home. Great to take to a picnic or any gathering, or just after dinner with the fam. Try it, you won't be disappointed.

Bud's Potato Salad

Reviewed: Jun. 5, 2006
This was VERY good! I was sceptical about lemon juice in potato salad... my hubby's a mayo/mustard potato salad guy, so this was a gamble. I couldn't get him out of the bowl! Best the day of making, after a day or two, the eggs taste hard & the dressing is absorbed too much for it to be real creamy anymore. Great for company & picnics! Will use often, that's certain!

Fresh Corn Spoon Bread

Reviewed: Apr. 11, 2006
This is sitting in our kitchen, 1/2 served but not really consumed... we really didn't enjoy this. Too time consuming (stove watching & stirring) to really accomplish much else except maybe, MAYBE stir browning beef, but really, no one enjoyed it as I hoped. I think I'll try the Chi Chi's corn cake recipe, that's more like what I was hoping from this. More like a corn meal mush quiche.

Mexican Casserole

Reviewed: Apr. 11, 2006
I used ground Turkey & didn't have ranch beans so I added Ortega taco spices to the meat & a can of Black beans. This is a keeper! Like other reviewers, I also used only 2 cups of cheese, we have a lactose intoloerant toddler... it's hard to get around even just 2 cups of it! Anyway, it was VERY filling, satisfying & delish! Everyone gobbled it up & it's going to stay in my recipe box & utilized monthly!!!

Broccoli Rice Side Dish

Reviewed: Mar. 10, 2006
We used chopped, leftover wheat spaghetti & leftover cooked brown rice and Colby/Jack cheese instead of processed goop. It was delightful. I vamped it up to feed my 6 people family & used a honkin' can of cream of Chicken soup & doubled the other ingredients, except the cheese. Microwaved it and then broiled it for a couple of minutes to get the onions crispy. My husband forwent the broiled chicken breasts I made & said, "Just more of that broccoli stuff!" Mmmm!!! Kids oved it! Four stars because the broccoli was a bit undone, too crunchy.

Whole Wheat Wraps

Reviewed: Mar. 10, 2006
Yummmmm! These were very good. I had to add a bit more wheat flour, otherwise these would have been too sticky. Didn't have any wax paper so I floured my board & rolling pin & rolled them out thin. If one gets stiff, let it sit while you do another. Really good with another recipe from this site for Make Ahead Lunch Wraps. Be careful that you use a SEASONED griddle, ungreased... otherwise you'll destroy your pan with the flour burning. Great recipe, low fat & healthy, why buy?? You KNOW what's in these!

Asian Fire Meat

Reviewed: Jan. 11, 2006
I didn't use red pepper flakes, I hadn't any. I used a red chili pepper & marinated this all day. Stir-fryed it and served it with rice & leaf lettuce, too. It was absolutely divine! My husband said it was like "popcorn" because he kept reaching into the wok & eating the meat!! I cut the meat into long, thin strips. I also served a ton of stir fry veggies. Such a great dinner. This is a keeper. I don't think that red pepper would be good for us, this with the chili pepper, had a creeper hot. Eat-up, suddenly you're warm. Great! Just right! I also used 2 pounds of meat & kept the ingredients the same for the marinade, adding 1 tbs. soy sauce. Thank you Gary!

Oven Fried Chicken III

Reviewed: Jan. 6, 2006
This turned out pretty yummy. Next time I'm using boneless, skinless & it'll be super. I really like the idea of NO SPLATTERING OIL & GREASE, no burns on my arms! And no worrying if the drumsticks are done! This is a keeper. Try it out! One quick Idea is to use a big zip bag for the mayo, too, then, no mess! Great with a side of Broccoli & Cheese & baked potato, although that's a heavy meal! Good for company, ours loved it! (I added more spices like parsley, more pepper, & thyme galore!)

Elaine's Sweet and Tangy Loose Beef BBQ

Reviewed: Jan. 6, 2006
The meat was tender but the BBQ sauce wasn't "tough" enough... too runny and a bit on the bland side. Everyone ate it up and once I added about 1/2 cup of Famous Dave's Rich & Sassy BBQ Sauce + topped the toasted buns with fresh coleslaw (the REAL WAY TO EAT SOUTHERN BBQs!) these were absolutely divine! So, I rate it on the "spaghetti-y" side of BBQ... add your favorite sauce to thicken & flavor it up & it'll be tops!

Melanie's Garden-Tomato Soup

Reviewed: Sep. 21, 2005
This just wasn't very good to us and we love tomato soup. We ended up trying to cream it up with some cream, then it was so strong on the tomato bite that we had to sugar it up to 4 1/2 tsp and more salt. We just didn't find it very satisfying at all.

Basil Tomato Pork Chops

Reviewed: Sep. 15, 2005
The meat was moist, but the sauce was not very good. Ended up serving over mashed potatoes and adding a ton of salt because it just needed it! This recipe has caused my meat and potatoes husband to declare vegetarianism. ...oh, dear. We must not be big on basil or something. (used fresh tomatoes is the only change I made.) Read the reviews, thought I wouldn't go wrong. Now I have a full pot of it in the frige & no one wants to eat it. Boo hoo for me.
