Quick Savory Cranberry Glazed Pork Loin Roast

I wasn't wowed by it. But it was a nice change. I'm always looking for a different way to spice up pork. I think I still prefer Erindix's "Slow Cooker Porkchops II" or Chowsito "Amazing Pork Tenderloin in the Slow Cooker" recipes (with mushies and onions of course).

Black Beans and Rice

Award Winning Soft Chocolate Chip Cookies

Mr. Christie - eat your heart out! These were the BEST chocolate chip cookies ever! I wanted something that was more than the basic recipe and this was it. Very moist. With a gas oven, 9 minutes was perfect. I used a melon scoop to roll, refrigerated for 10-15 minutes, then slightly pressed out each cookie.

Chocolate Cappuccino Cheesecake

Excellent! I know not to over bake a cheesecake, but I found that 45 minutes was a bit short - needed 55 min. Perhaps it was the water bath that I always use to bake a cheesecake.

Mushroom Stuffing Balls

Really enjoyed these. They go well with an assortment of appetizers. I did cut back slightly on the bread crumbs as the first time I made them, they were somewhat dry.

Beef Tenderloin With Roasted Shallots

I gave it a four stars simply because as I was making this, all I could think was "there's got to be simpler, less time consuming way to make this". But I've gone over the recipe several times, and I can think of no way to lessen the prep time. 15min? I don't think so. I did add fresh mushies with the shallots. Indeed the flavour was fantastic - but I was disappointed with how "unorganized" I felt while preparing the dish.

Mulligatawny Soup I

Really loved it! I didn't add the cream as I'm not partial to cream soup. In lieu, I doubled up on the veggies and chicken, and added a cup of water with the stock. I like a nice hearty soup, and will definitely make again - and double up yet again the veggies and the chicken! I cook on a gas stove and 1/2 hr to simmer the veggies is way too long. Probably will hold to 10min.
