Sweet and Sour Pork I

This recipe was amazing!! We made it last night and couldn't get over how well it turned out...better than takeout by a mile! Will definitely be making again. I followed most of the recipe exactly except that we also added in broccoli (we love tons of veggies). For the pork, however, we made some changes. First of all, we used leftover pork tenderloin cut up into cubes. Instead of breading and frying it the way they do in the recipe, I used another technique that I use for other dishes as well, its called 'velveting'. You marinate the pork cubes in a mixture of 1 beaten egg, 1 TBSP cornstarch, 1 TBSP cooking sherry or beer, 2 TSP sesame oil, and 1/2 TSP salt. Cover and put in the fridge for at least 1 hour. Before you are ready to cook, take the pork cubes out, drain the marinade, and dust in more cornstarch. Then fry until golden brown.

Authentic Thai Coconut Soup

I made this soup, and it turned out better than a restaurant! It was surprisingly easy to make as well. I would have given it 5 stars but the fish sauce made our kitchen smell pretty bad, and now I am forbidden from making it when my bf is home. Tasted amazing though!

Pork Tenderloin

I tried this recipe mostly for the marinade, and it was a huge hit. I've made it with both tenderloin and I also tried it last night with pork chops. The first time I made it, I also added some honey into the marinade, and it was delicious. I omitted the apple jelly since my boyfriend doesn't like it, but the meat turned out fantastic. This will definitely be a staple in our house.

Most Requested Banana Chocolate Chip Muffins

I tried this recipe last night, and the muffins turned out beautifully. I accidentally used the 1/3 measuring cup instead of the 1/4 measuring cup so I ended up putting in a cup of sugar instead of 3/4, but it still turned out. I omitted the flax, since I didn't have any, and I also only added 2 bananas since that is what I had on hand. My boyfriend noted that they weren't as banana-y as they could have been, so next time I would add the third banana. I also noticed the batter was very dry and crumbly, so I added 1/2 cup of sour cream to make it a little softer. All in all, they turned out moist, cakey, and delicious. Next time I would add a little cinnamon and nutmeg as well, as other posters have said.

Alaska Salmon Bake with Pecan Crunch Coating

Made this the other day, and I loved it. I used Rainbow Trout instead of Salmon, and I didn't have pecans so I used chopped walnuts, and it was delicious. I found the crumbly topping a little dry, so I drizzled leftover sauce on top as well. Turned out delicious, I can't wait to make it again.
