Shrimp Fettuccine Alfredo

This was a great-tasting alfredo dish! Definitely either double the sauce ingredients, or half the pasta which is what I did since there's only two of us. Even with this change, I still feel like I did not have enough sauce, so I added more half-and-half and it was fine. I did NOT have a problem with the sauce being too thin. I'm not sure why; after reading the reviews I was so sure I would. I don't even know what I did differently. I did use mostly thawed shrimp so there was a lot of water in the pan with the butter and garlic. I drained that all out (keeping the garlic of course!). My boyfriend said it tasted just like restaurant-quality alfredo, and he knew it was low(er) fat. I used high-fiber penne from Trader Joe's and added chopped broccoli (which BF loved because the broccoli pieces were chock full of alfredo!). Definitely a keeper.

Flourless Peanut Butter Cookies

Gosh these are wonderful. So peanut buttery! I also used only 1/2c white sugar, 1/4c brown sugar and some vanilla. These are so hard to NOT eat all of them straight from the oven.

Sturdy Whipped Cream Frosting

My new go-to frosting. Everyone loved it! I did not make any changes except half the ingredients because I only had 1 cup of heavy cream. This was the perfect amount to frost a 9x13" cake. It kept its shape overnight and was just sweet enough without being too much.

Quick Black Forest Cake

This is my go-to cake recipe anytime I need to make one for my mom (she loves chocolate and cherries). I have made it a few times; however, I only just noticed the time before last the size of the cake mix. My grocery store does not have 18.25oz cake mixes in devil's food. So what I did this weekend was buy the regular 15.25oz without pudding in the mix. I also bought a 3.9oz instant chocolate pudding mix and used most of that to get close to 18.25oz. This resulted in a super moist cake! Like many others, I also use mini chocolate chips. Until this weekend I would make the glaze but eventually I realized it was too sweet, so I made the Sturdy Whipped Cream Frosting from this site. It was amazing!!

Baked Salmon II

I made the following changes (3 T. olive oil, 3/4 tsp basil, 1/2 tsp salt, 3 T fresh lemon juice, 1 tsp dried parsley, dash of dill weed) and it was so so good. The marinade smelled divine. This was my first time making salmon and I will make this recipe again. I served it with brown rice and steamed broccoli, and I felt good eating it =) Thanks!

Cheddar Baked Chicken

Gosh this was amazing! One of the juiciest, most tender pieces of chicken I've ever had. The crunchy cheese coating is to die for! Overall very easy to prepare. I used more bread crumbs because I did't have the cereal and it still tasted great. I will definitely make this again, thanks!

Best Brownies

I usually change one of the ingredients in a recipe, but this one I kept the exact same. I did use a larger pan so they'd be smaller, and I cut them to bite-size pieces. I doubled the batch. I threw in chocolate chips in the first batch and mini reese's pieces in the second batch. Both turned out great, so sinful. Btw, this was my first attempt at brownies from scratch, and I'm not going back! Thanks!

Veggie Pizza

This was great and so refreshing. I used cucumbers, broccoli, celery, radishes and red peppers. I didn't use the dill weed and it still came out great. A beautiful dish! I'll be making it for both of my upcoming tea parties.

Heavenly Chocolate Mousse

This was great! Just a warning, it is VERY rich. Luckily I love rich desserts and everyone else enjoyed it. I poured the mousse into martini glasses, covered it with a small layer of crushed Oreos, then topped it with whipped cream and red and green sprinkles for the holidays. They were so cute and delicious. Next time we'll use this recipe to fill those little chocolate shotglasses for New Years.

Linda's Lasagna

I made this tonight for my boyfriend's family, and it was my first time making a lasagna ever. Like others I switched to ricotta and also made it the night before. I covered it with plastic wrap, then with foil, and stuck it in the fridge. Then tonight I took off the plastic wrap and baked it with the foil on until 10 minutes until the end. The spices really sat well overnight and the sauce was even better than when I tested it last night. Everyone loved it, someone even had three large pieces of it! That indicates to me that this is a keeper!

Cheese Corn Spoon Bread

I was looking for a spoon bread recipe after I tried some at a local Mexican restaurant, which was a sweeter kind than this one. I only sprinkled a little bit of cheese on top, about 2 minutes before the bread was done and it melted perfectly. I'll definitely make this again, but I'll add more Splenda next time. My boyfriend absolutely loved it and said he'd eat the bread by itself for dinner. Somehow though the bread was even better the next day and I didn't even warm it up!

Summer Chicken Burgers

This burger was great! Even my brother said he loves it, after telling me he wanted his without the avocado or onions (of course, I said no!). I used ground chicken burgers instead and like another reviewer said, I mixed the avocado and mayo (I only used about 1 tbsp) to make a spread. It came out great, but next time I'll probably add bacon to give it just a little bit of oomph. Thanks!

Breaded Flounder Fillets

Not sure what went wrong. I followed the recipe exactly but it just didn't look good on the serving plate. I was one of the only brave ones to try it and I didn't like it. It was cooked but didn't look like it. I would have to experiment next time.

Broiled Tilapia Parmesan

Made these for Christmas Eve dinner. This was my first time making any kind of fish (I love fish, just never made it!) and it came out great. I had to broil it a little longer on both sides though. The cheesy topping was awesome. I'll definitely make this again!

Garlic Red Potatoes

I made these for Christmas Eve dinner because my boyfriend was joining us and he doesn't like mushrooms, which is in most of the other dishes. I've tried making something like these before and I learned from that experience; this time I parboiled them for about 10-15 minutes before baking. I did not use as much lemon juice, mainly because we did not have many lemons on hand. They came out great. I thought they were delicious and would be a terrific side dish for many meals. I added a little bit of parsley on top just to give it more color. A+!

Pumpkin Cheesecake I

I made this twice- once for my roommates (as a test) and another for my boyfriend's family. Everyone who tried it loved it! It didn't taste too pumpkiny whichw as good, although, it did look more pie and not cheesecake (with a dark orange color). Maybe I added too much pumpkin. Either way, it was delicious, and I'll be making this every fall! Thanks!

Buffalo Chicken Dip

MAN! What a great dip, and I don't even like buffalo wings! I halved the recipe because I just wanted to test it out before the 4th. I used bleu cheese instead of ranch (because we didn't have ranch on hand, but it worked out anyway) and I boiled two pieces of chicken breast instead of using a can. I also didn't use as much cream cheese. Best appetizer I have made in a while. My brother finished the entire dish with tortilla chips. And my brother never likes anything I make! This is a keeper and I will definitely make it for the 4th.
