About this Cook
Christian, married, working mom of 3 boys, too busy to cook more than quick meals most nights but we try!
My favorite things to cook
Baking is really my thing. Cookies, cakes, bars, etc. I am also good at comfort foods.
My favorite family cooking traditions
Food in itself has always been a tradition in my family. My husband is African-American, and I am a mixture of mostly European decent, mainly Scandinavian influences Our meals are sometimes a melting pot of influences. We do big holiday meals and lots of holiday baking. I enjoy making people happy with my cooking.
My cooking triumphs
Making lefsa and date filled cookies like my Grandmother used to. I try my hand at cake decorating when I have the opportunity.
My cooking tragedies
While making a butter cream frosting for the perfect italian cream cake I had just baked - I put mint extract into the frosting instead of the clear vanilla I intended to use. Strangely we ejoyed this mistake and I now occassionally make a batch "Mint" butter cream frosting.

Peanut Butter Balls III
Good recipe. I chilled the mixture over night and used a cookies scoop the next day to form the balls. I dipped some in semi-sweet and some in milk choc. I pefered the milk choc. I also added about a T. of crisco to the choc. when melting, a t. of veg. oil does the trick too.

Easy Peach Crisp II
Super recipe, I tried it with peaches and apples both worked great. I also tried halfing, that worked out fine too. Thanks!
