Cranberry Martini

Made this martini for a New Year's Eve party and it was a huge hit. It is wonderful!!! Only adjustment we made was to add an extra jigger of cranberry juice. Also tried the recipe using Cranberry-Pomagranat juice. Even better! Great recipe you just have to try!

Blackberry Pie I

Made this recipe for the first time the other day using the Pie Crust IV recipe from this site. It was wonderful. The pie came out perfect. I added a little cinnamon and a pinch of nutmeg to the filling and dotted a couple tablespoons of butter over the filling before putting on the top crust, but other than that followed the recipe as written. Thanks for a simple and delicious blackberry pie.

Lemon Macaroon Tartlets

These tartlets are very tasty, but a agree with another reviewer that they were a challenge to remove from the pan, even when only cooled for the two minutes recommended. Also, a baking time would have been helpful. I checked them in five minute intervals and it took 10-15 minutes to get the browned edges stated in the recipe. I also filled them with a homemade vanilla custard and topped them with real whipped cream (not being a fan of lemon desserts or whipped topping). All in all a good recipe. Might try the chocolate others stated next time.

Cheese Ravioli with Three Pepper Topping

Made this for dinner tonight! It was great! Quick, easy and delicious! Used a little more red pepper flake for some added heat. Also, used a little less chicken stock and added in some half and half at the end of cooking. Sprinkled with Parmasan cheese and served with a nice green salad. Great way to use up some peppers from the garden.

Quick Greek Pasta Salad with Steak

This pasta salad is wonderful. I did however make a few changes. I used chicken in place of the steak and scallions in place of the shallots. Also added a little red pepper flake in at the end and left out the sunflower seeds as well. Made it for some friends and all of them loved it. A great dish for picnics and family gatherings too. Great warm, room temperature or served cold.

Bacon and Tomato Cups

I have made this recipe several times and every time someone asks me for the recipe. It is wonderful! I use "Grands" flaky biscuits though and use regular sized muffin tins. I found with the mini muffin tins (at least the ones I have) the filling all spilled out over the edge with the regular sized biscuits. So, I find that the "Grands" biscuits (halved like the recipe calls for) fit the regular muffin tins great without the need to prepare additional filling.

Brooke's Best Bombshell Brownies

This recipe was okay, but not great. They had a nice chewy sort of texture, but the flavor was just a little off. Not sure why exactly. With all of the butter in this recipe I don't think I will be wasting the ingredients playing around with this particular recipe trying to perfect it.

Blueberry Buckle

In my rush to get this recipe made I neglected to read the reviews (which is something I normally always do). Anyway, I should have checked those reviews to find out that the recipe needed at least another 10 to 15 minutes of baking time. I made the recipe as written and it was tasty. Having now read the other reviews though, next time I will bake for 40-45 minutes. Also, I may add some additional cinnamon and possibly the lemon zest suggested by another reviewer. It is a great base recipe with the bake time correction. The time being off is the reason for the 4 star review, not the flavor.

Chicken Tortilla Soup V

Loved this recipe! I make it with shredded chicken and add a can of black beans and lime juice instead of lemon. A little chopped cilantro is a great addition too. Thanks for the great recipe!

Chicken Pot Pie IX

I took the advice of some other reviewers and prebaked the bottom crust for 7 minutes. Also brushed both crusts with egg white before baking. Added about 1/2 teaspoon garlic powder, 1/4 teaspoon thyme, 1/4 teaspoon sage to the filling along with a little extra pepper. Also added three small potatoes to the vegetables and used fresh carrots. I found there to be plenty of "sauce" or "gravy" for the filling. I didn't double it. The filling with all of the chicken and vegetables was more than enough to fill my 9 inch deep dish pie plate. Excellent recipe. I will certainly make this again!

I made this recipe for a holiday party and it got rave reviews. My husband loved them and so did the other party guests. I needed something dairy-free for a friend with an allergy and this recipe fit the bill! I will be making this one again and again!

Vegetable Beef Soup I

I have been looking for a good, basic, simple homestyle Vegetable Beef Soup and this recipe is just that. I made only a few adjustments to suit my own taste, but all in all stayed pretty true to the recipe. I used V8 in place of half of the Tomato juice and Beef Stock in place of the other half. I also added Thyme in place of the Basil. Used a cut up Chuck Roast in place of the Stew Meat and added a chopped onion when browning the meat. Other than that stayed true to the recipe and the soup came out great!

Raspberry Almond Coffeecake

Delicious! Made with frozen raspberries and used pecans instead of almonds (didn't have any). Also doubled the batter as many other reviewers suggested and prepared in a 9 inch springform pan. Will try again with other various berries.

Slow-Cooked Corn Chowder

Made this chowder for a soup pot-luck meal with extended family and everyone raved. When they found out how easy it was everyone wanted the recipe. The four star rating is based on the ease of the recipe and the response of all of the others who tried it. I personally thought it was only average from a taste perspective, but considering the amount of effort it was a tasty return for the time invested.

White Cheese Chicken Lasagna

This lasagna was delicious. I prepared it with "no boil" lasagna noodles and it came out great. I also used fresh spinach (I don't care for frozen) and it worked perfectly. Leftovers were even better the next day too.

Low-Fat Blueberry Bran Muffins

These blueberry muffins were delicious. Didn't miss the fat. I didn't have wheat bran so I substituted half whole wheat and half all purpose flour for the wheat bran and the muffins came out delicious. Actually taste better when cooled completely or the next day rather than warm out of the oven.

Italian Confetti Pasta Salad

I made this pasta salad this past weekend for a birthday party and it was delicious. The whole family couldn't get enough of it. The basil and tomatoes fresh from the garden were wonderful in this recipe. I halved the recipe by cooking 8 ounces of pasta and halving the dressing. Next time I might add a little Parmesan cheese, not that it was needed just for and added flavor element.

Pie Crust IV

I have been on the search for a pie crust that works for me for years and this one has finally ended my search. I have used this pie crust recipe several times now and every time the crust comes out perfect. It rolls out beautifully and once baked results in a flaky, tender crust. I have made both single and double crust pies with this recipe and all have turned out perfect. Thank you for finally putting an end to my pie crust frustration!

Chocolate Chocolate Raisin Cookies

I made these for my husband who LOVES chocolate covered raisins. They were a huge hit!!! Only change I made was to substitute butter flavored crisco for the butter. Thanks for the great recipe!
