Snickerdoodles III

These cookies are lovely, nice basic snicker doodles. I love that they use butter instead of shortening. Easy recipe that I followed exactly except I smashed the cookies with my palm since they don't spread much. I lowered my temperature to 380 degrees F and baked for ten minutes. I let cool a few min on cookie sheet then transfer to wire rack. They were still chewy but not raw. They were the hit of the Christmas potluck and one woman asked how I made them chewy. Tasty!

Cocktail Meatballs

These are tasty and everyone loves at parties. I use frozen homestyle meatballs from Walmart though which is 2 lbs so I double the chili sauce, lemon juice, and brown sugar and use the entire 15 oz can of cranberry sauce. and per the suggestion of another reviewer, make the sauce in a pan, pour over meatballs and let sit overnight in fridge to develop flavor. They are always gone by end of the party but I wonder how much better they would be with homemade meatballs. When I have leftovers, I sometimes put a few over white jasmine rice mixed with sautéed onions, green peppers and pineapple. Makes a great weekday meal.

Little Smokies

Used Sweet Baby Ray's and heated all the sauce ingredients in a saucepan. Poured over weenies in crockpot and let in sit overnight. Not sure why I do this but another review did this to a meatball recipe to develop flavors so thought it would be a good idea here too. Heated a few hours before our party. I had a hard time finding 16 oz packages so just used three 14 oz packages and it was still enough sauce but you may have to add a little more ketchup or extra bbq sauce if you have some. They were totally devoured by the end of the night!

Skillet Ham, Cabbage and Potatoes

Reminds me of a dish my house mom in Spain made us called rollo repollo. I don't use margarine so used half butter, half olive oil to sautee onions. I think half a cabbage would work better because it was falling out of the pan with a whole cabbage. Make sure you cut your potatoes small enough to cook otherwise it will take some time. I also use 1-2 tsp of paprika because I love it!

Slider-Style Mini Burgers

Used Kings Hawaiian rolls. I used half ground sirloin for flavor and half ground chuck for juiciness. Thought all the mayo was necessary. Could barely taste it in mixture but added to the meat's creaminess. Super yummy. Never had White Castle but some people said that is what they tasted like.

Mr. Head's Spicy Tuna Melt

I love that this recipe is not loaded with mayo which my husband hates. He can't even taste it in this recipe! I use olive oil or mediterranean blend oil bc that is what I cook with. Sometimes I use tuna with water, dijon or reg mustard, and use what cheese I have on hand which is usually cheddar jack or swiss. Doesn't matter what bread you use either. It is delicious and full of flavor!

Fluffy Pancakes

OMG these were so good I can still taste them. This was the first time I made pancakes not from a box. I read all the reviews and decided to use 1 tbsp on apple cider vinegar. I also used half brown sugar, half white. I still had some lumps in my mix but didn't want to over mix. I let the batter sit for a few minutes. I was only able to make 5 pancakes from the batter which was fine bc they are so filling and we had eggs and sausage on the side. They were close to a half inch thick. They are thick and dense but I do think I prefer a thinner, fluffier pancake. I will make these again, depending on the type of pancake I'm in the mood for. :)

Mouth-Watering Stuffed Mushrooms

Delicious! I used 24 smaller mushrooms to make more finger food like. Used a baggie to pipe the cream mixture in the shrooms. I made the day before, put on a baking sheet covered with parchment, covered with foil and put in the fridge. When I was ready to heat the next day I removed the foil, topped with parmesan cheese and breadcrumbs, and dipped caps in melted butter. Next time I think I'll add panko breadcrumbs for more of a crunch! Everyone loved them!

Caprese Appetizer

Great appetizer and healthy snack. I use the Formaggio marinated mozzarella balls from costco and cut them in half. Sometimes I cut the tomatoes in half depending on their size. I also but a folded basil leaf in the middle. Once the skewers are done, I drizzle with the marinade and some balsamic vinegar.

Christmas Breakfast Sausage Casserole

My husband and I both liked this recipe a lot. Good for when you have guests over. Used Jimmy Dean maple sausage, added yellow onion to sausage while it cooked, and used 6 eggs instead of 4. I used french bread and the casserole still cake out thick and more than enough for us in a 9x13 pan. Baked covered for 35 min and uncovered for 15. Thanks for the recipe!
